Okay, its a non dog post !!

I'm a Nutritionist, Lecturer and more recently a Menopause Health Coach. This last year it's been incredible working with women going through this life stage, and they have candidly shared with me how their menopausal symptoms have affected their mental and physical health. I have helped them to improve their psycho-emotional wellbeing, reach a better understanding of their bodies and hormones, reduced their feelings of isolation and equipped them in self-management so they can be active in their own care and minimise the disruption menopause causes in their lives.

Now, I would like to create a simple group programme to reach more people and offer more affordable access to my support and services. My mission is to help empower as many women as possible to take control of their Menopause so they can lead a life free of uncomfortable symptoms long term but not everyone favours or can afford a 1:1 approach.

Plum Clafoutis

I picked up a bag of plums in my delivery this week and decided to try something new and viola - plum clafoutis.

So easy
.. just pop 50g almond flour, 1 tbsp coconut four, 3 eggs, 2 tbsp maple syrup and 200ml of double cream into a blender and whizz.
Then pour the blended batter into a buttered oven dish.
Half your plums and remove the stones and place onto the batter, and in it goes into a hot oven (200C fan) for 15mins.

Quick, easy, family friendly dessert, filling and satisfying.

Too good not to share. 😋😋

Forever Learning!

Day1 of a 5 day course on Frequency Specific Microcurrent (FSM)

Frequencies have been in use since the 1900s by Medical Doctors and Osteopaths in the UK, US and Germany. However, in 1934 they were banned along with many other medical modalities, when the Pharmaceutical Industry declared surgery and drugs to be the only permitted medical practice.

Well, there are now 4000 practitioners in 23 countries using FSM. I'm here as I'm hoping to use it to treat myself and my chronic ankle problem which is causing me constant pain and really impacting my sleep, mobility, stability and ability to exercise. And there's no rest when you have 2 lively huskies!

So i'm here with Doctors, Chiros, Osteopaths, Physiotherapists, Acupuncturists and other medical professionals to learn about this amazing tool. I hope its the start of my healing journey. 🙏

🍋 Lemon & Raspberry Cookies

It's been a busy Easter weekend with the puppies 🐶🐶🐶🐶, but i knocked up some Lemon & Raspberry Cookies for blood sugar balancing snacks to keep us going on these sleepless days and nights.

They are fresh tasting and lemony so taste healthy and not overly sweet but made a nice change from chocolate and sweet cakes in abundance at Easter.

As always i like to post easy recipes so you can reproduce these at home without taking a day off work to prep 😂 😂🤟🏻

Ingredients
🍪 225g ground almonds
🍪 25g soft organic butter
🍪 1 egg white
🍪 2 tsp raw honey
🍪 2 tsp vanilla extract
🍪 zest of 1/2 lemon
🍪 75g raspberries

Method
🍋 Add all ingredients together in a mixing bowl and stir with a metal spoon so you can break up the butter and raspberries.
🍋 Use a dessert spoon to scoop and roll into a ball then squash with the palm of your hand into a cookie shape.
🍋 Place your cookies onto a baking tray lined with parchment paper and bake at 180C in a fan or 200C normal oven for 10 minutes. Leave to cool on a wire rack.
🍋 They will bake golden brown on the outside and stay soft in the centre like a true cookie. Can always pop into the oven again for a few mins at 160C fan or 180C conventional if you would like to firm them up the next day.
🍋 Makes approx 20 and will last 2 days in an airtight container or you can keep in the fridge for 5 days. Dont know if they freeze as we gobbled them all up 😂😋

Cauliflower Tart 😋😋

Tomorrow I am back in the kitchen to teach chef. The lecture is Pulses & Grains.

I shall be looking at the nutritional value, many different types, preparation, cooking, storage methods.

I shall of course be talking about how it impacts on and covering diet and and non coeliac gluten sensitivity (NCGS).

There are some cool recipes to cook, a big class and I cant wait.

Here is one of the recipes we will be making - Cauli tart. Doesnt it look good!

So, it’s been a while since I really talked about myself and what I do, and with some new faces on my page I thought you all might like some fun facts about me! 😄

I get 2 or 3 birthdays every year as I was born on the 29th February. This year I will be celebrating on the 28th and the 1st March as there is no 29.

I have a husky called Mishka

I love to sail and can skipper motorboats.

I studied Economia e Commercio in Bergamo, Italy and speak fluent French and Italian

I used to be an Investment Banker and worked in the City for many years, brokering Italian Government bonds and as a Relationship Manager for ABN AMRO Bank

I had my own Lingerie Boutique in Shoreditch, East London called Bo****lo

I took my Nutrition Diploma at the College of Naturopathic Medicine

I worked for 2 years at the London Clinic of Nutrition in Marylebone

I teach Vegan Chef and Natural Chef at the College of Naturopathic Medicine for the last 2 years

I opened my Private Practice just before lockdown. Not the best timing.

I practice from clinic rooms at Shoreditch / Liverpool St and work online in zoom consultation

I am passionate about Women’s health

I also specialise in the gut.

Overall, I just love to help people get healthier with tweaks to diet and lifestyle.

I teach healthy cooking skills so you can look after your body

I transform lives, I prevent operations, I help produce successful pregnancies, I assist healthy ageing.

They say the way to the heart is the stomach, so it seems fitting to follow lovely February with gutsy March.

Here’s what I have going on in March.

For this month, I want to focus in on gut health here in on Linked In so if you have any questions or queries either make a comment on my posts or just dm me and we can discuss in private and give you some clarity on what action to take.

The gut begins at the mouth through the 2cm wide oesophageal tube into the side of the stomach onto the 7meters of small intestine which then meanders through to the large colon until it reaches the exit at your guessed it, the a**s.

The gastrointestinal tract - what a journey.

In truth gut health is far more important that people often realise and can affect many different aspects of our health. Now who wouldn’t want to know more about that!

I shall also be running a Cooking for Gut Health Masterclass on the 2nd April in which you will learn all about the gut microbiome, understanding the best foods to eat to nurture your digestive system, feed your microbiome and heal any inflammation with gut loving foods.

You will make some delicious gut healing recipes, we’ll eat a healthy lunch together and you get some home-made probiotic goodies (by you) to take away.

Ahhh its easy - Pecan Banana Bread 🍌🍞
Takes me back to lockdown 2020 😂

Havent made a banana in ages and I have a new recipe to compete with my quinoa version. (Check that one out here on the grid)

It's really simple to make and wont spike you're blood sugar as theres very little sweetener in it and its mainly all protein.

With 4 eggs and ground pecans for the flour it's filling and healthy so spike your blood glucose.

Pecans are still pretty exotic for us Brits 😂 but are brimming with flavour as well as health benefits:

🥜 healthy fats providing long lasting energy & lots of fibre for a healthy gut
🥜 antioxidant vitamins & minerals, such as manganese in particular, protecting against inflammation, heart disease & cancer
🥜 zinc manganese & copper which protect against osteoporosis & brittle bones
🥜 helping mood, focus and protective against neurodegenerative disorders, such as Dementia & Alzeimers

I use them alot in my granola too. Do you eat pecans?

What a beauty!

7.30am. Stunning sunrise over the Regent's Canal at Broadway Market this morning. Whilst the streets were just waking up, people were started to appear into the crisp morning rubbing sleep from their eyes. The coffee shop lights were like beacons surrounded by bumbling sleepwalkers clutching their morning nectar. I joined the queue.

🤸‍♀️Healthy snacks – Granola bars 👌🏻⠀

👩‍🏫 These granola bars are perfect snacks for busy families to grab and go, for school or the work.
👨‍⚖️ A healthy fuel for hungry, growing children and naturally sweetened with dates, cinnamon and black strap molasses, which are rich in iron, potassium, magnesium, manganese, chromium, selenium, calcium – they are practically a multi – mineral!

🖤 Black strap molasses are the by-product of sugar cane extraction, made from the 3rd boil so it has a bittersweet flavour which is very concentrated.
🖤 Being low glycaemic index, this slows the metabolism of glucose and carbohydrates so is a good sugar option for diabetes.
🖤 Anti-inflammatory and high in anti-oxidants, black strap molasses reduces cancer causing free radicals and it is also a natural wound healer which research has shown to be beneficial for skin conditions such as acne or burns when applied topically.
🖤 It’s a good one for the store cupboard and is even great in a simple porridge with some banana. ⠀

Ingredients:⠀

85g dates ⠀
70ml boiling water⠀
85ml coconut oil⠀
1.5 tbsp black strap molasses⠀
½ tsp cinnamon⠀
170g gluten free oat flakes⠀
30g pecan nuts⠀
30g walnuts⠀
15g pumpkin and sunflower seeds⠀
A generous sprinkling of cacao nibs ⠀

Method:⠀

👩‍🍳 Chop the dates and add to a saucepan with the boiling water and simmer and stir for a couple of minutes until you have a thick paste.⠀
👩‍🍳 Add the coconut oil and molasses and mix well.⠀
👩‍🍳 Chop the nuts and seeds and add with the cinnamon to the oats. ⠀
👩‍🍳 Mix together with the ingredients in the saucepan until the oats are well coated and sticky. ⠀
👩‍🍳 Transfer into a lined baking tray and press down with the back of spoon until smooth and even. ⠀
👩‍🍳 Sprinkle with the cacao nibs and push into the mixture. ⠀
👩‍🍳 Cook in a preheated oven at 180C for 20minutes or until the top is golden brown. ⠀
👩‍🍳 Remove from the oven and cut into bars whilst warm using a sharp knife.⠀
👩‍🍳 Allow to cool in the tray then transfer to an airtight container.

Porridge is back!

My first porridge of the season! And today was not so much about the oats but all about the apples.

These ☀️Sunshine apples - check out that yellow! Are so called because they were stewed with tumeric, that powerful anti-inflammatory which supports my joint health, and gives a subtle sweetness, besides the beautiful color, ginger, cardamon and staranise. All helping my immunity as well.

🍏 Cooked apples release a gut healing fibre called pectin which helps repair intestinal mucosal lining, reduces inflammation and modulates gut bacteria. I like to keep the skin on to maximise nutrients as the skin is full of minerals, fibre and beneficial anti-oxidants called polyphenols.

What's more, stewed apples help regulate bowel movements so are a great addition to your daily diet if you suffer with or constipation.

Working hard at the moment so really appreciate my Sunday off to walk Mishka over Hackney's beautiful Victoria Park followed by a trip to the Organic Farmers market.
