🍴COUS COUS SALAD WITH STICKY MEAT-FREE SAUSAGES 🍴
This one is perfect to double-up on and enjoy for lunch the next day too!
Ingredients:
6 meat-free sausages
1 pepper, deseeded and diced
¼ cucumber, diced
1 cup rocket
½ red onion, finely sliced
1 vegetable stock cube
200g cous cous
½ pomegranate seeds
½ lime
8 cherry tomatoes, halved
2 tbsp honey
200ml boiling water
Method:
Start by adding the cous cous and vegetable stock cube to a large bowl. Pour in the boiling
water, stir to dissolve the stock cube, cover the bowl with foil, and set it aside to allow the
cous cous to absorb the water.
Next, heat 1 tablespoon of oil in a large frying pan over medium heat. Add the meat-free
sausages to one side of the pan and the sliced onion to the other. Fry for about 7 minutes,
turning occasionally. Drizzle the honey over the sausages and onions, allowing them to
caramelize for another minute.
While the sausages and onions are cooking, uncover the cous cous and give it a good stir to
fluff it up. Mix in the diced pepper, cucumber, halved cherry tomatoes, and rocket until
everything is well combined.
To serve, plate up the cous cous salad and top it with the sticky onions and sausages. Garnish
with pomegranate seeds and a squeeze of lime juice.

Hot Honey & Feta, Chicken Loaded Hashbrown! 🍯🔥🧀🍗 Crispy hashbrowns topped with succulent Chicken Rashers, tangy feta, and a drizzle of sweet & spicy hot honey. Perfect for breakfast, brunch, or anytime you crave a flavor-packed bite!
Serves: 2
Time: 15 minutes
Ingredients 👇
2 eggs
4 chicken rashers
2 large hashbrowns
2 tbsp crumbled feta
2 tsp honey
2 tsp chili flakes
Handful of rocket
Salt and pepper, to season
1 avocado, smashed
1 tbsp oil
Method 👇
Place the hashbrowns in the air fryer at 180°C for 10-12 minutes until golden brown.
Heat the oil in a pan over medium heat.
Add the chicken rashers and fry for 6-7 minutes, turning occasionally, until they are crispy.
Crack the eggs into a small pan over medium heat.
Stir continuously until the eggs scramble and are fully cooked.
Season with salt and pepper.
Place the cooked hashbrowns on a plate.
Spread the smashed avocado evenly over the hashbrowns.
Top with the scrambled eggs.
Place the chicken rashers on top of the eggs.
Add a handful of rocket on top.
Sprinkle the crumbled feta over the rocket.
Drizzle with honey and sprinkle with chili flakes.
Season with additional salt and pepper if desired.
Enjoy your delicious and quick loaded hashbrown brunch!

🍴MEAT FREE FOIL BAKED GARLIC SAUSAGE 🍴
Need a super simple weeknight meal? Look no further!
Ingredients
• 1 Pack Heck! Meat Free Sausages
• 2 tbsp Italian Herbs
• 2 tbsp vegan butter
• 4 garlic cloves
• 1 corn on the cob (quartered)
• 70g green beans
Method
1. Use two 20x20cm kitchen foil rectangles and place half of the corn, half the sausages and half the green beans into each.
2. Add 1 tbsp vegan butter, 1 tbsp Italian herbs and 2 garlic cloves into each foil and crunch them up to close at the top.
3 . Place your garlic butter parcels into the pre-heated oven at 200C for 15-20 minutes or until the sausages, corn and beans are cooked. Alternatively, place them on your BBQ for 15 minutes.
Serve alongside rice or potatoes

Sausage Rasher loaded toast? Yes please!
🍴CHICKEN ITALIA LASAGNA 🍴A tasty twist on a weeknight classic!
Ingredients
1 pack Chicken Italia Mince
2 cloves finely chopped
1 large onion finely diced
1 large carrot finely diced
2 sticks celery finely diced
1 tbsp tomato puree
2 cans chopped tomato
1 large bag spinach
1 bunch basil
400g lasagna sheets
2 balls mozzarella torn into small pieces
20g parmesan cheese
For the sauce
60g butter
60g plain flour
600g semi skim milk
Small grating nutmeg (optional)
20g parmesan cheese
How to:
Preheat the oven 180 degrees c fan
Heat 1 tbsp oil in a large frying pan over a medium high heat
Fry the mince for 3-5 minutes until golden, remove
Reduce the heat to medium, add the garlic, onion, carrot and celery with a pinch of salt. Cook for 5 - 8 minutes until soft
Add the chicken back to the pan with the tomato puree, tinned tomatoes and half the basil. Simmer for 20-30 minutes until thick.
Meanwhile make the white sauce.
Melt the butter in a saucepan over a medium heat. Add the flour, cook for a couple of minutes stirring all the time until you have a paste
Gradually pour in the milk, stirring all the time until smooth. Simmer for 5-10 minutes until thick stirring all the time. Then add the nutmeg using parmesan. Season to taste
when the chicken has had 20-30 mins and is thick transfer half to an oven proof dish. Cover with 1 layer of lasagna sheets. Spread over half of the sauce. Repeat the process.
Top with mozzarella and parmesan.
Bake for 20-30 minutes until golden and bubbly

What would go in your dream sausage roll?
🍴HECK PORK RASHER STUFFED CHICKEN 🍴
This one is set to become a new midweek staple!
Ingredients:
2 HECK pork rashers
2 chicken breasts
1 tbsp cajun seasoning
30g grated mozzarella
500g potatoes
40g butter
100ml double cream
Method:
1 Preheat the oven to 180°c.
2 Coat each chicken breast in the cajun seasoning, then slice the chicken breasts lengthways to make a butterfly shape.
3 Place a pork rasher into the centre, followed by the mozzarella cheese. Fold back over so the filling is in the centre and place onto a baking tray.
4 Cook in a preheated oven fro 25-30 minutes.
5 Meanwhile, peel the potatoes and place in a saucepan of water. Bring to the boil and cook until a table knife slides in easily (around 15 minutes).
6 Drain the potatoes and leave to steam dry. Add back into the pan with the butter and cream. Season well and mash until smooth.
7 Serve the stuffed chicken breast on top of the creamy mash.
