Is “Flashback Friday” still a thing? This photo popped up on my phone, and I thought I’d share it. It captures a memorable moment from my experience attending training at Le Cordon Bleu culinary school. Throughout my time there, I had the opportunity to learn from top chefs, refine my skills and push myself to achieve my full potential.

This is our heavenly raspberry infused white chocolate sponge paired with a silky smooth white chocolate ganache.
Did you know that there are different portion sizes? A finger slice is 1”x 1”, dessert slice is 1”x2” and party slice is 2”x 2” (not shown in this picture). The size of the slice will determine the size of your cake.
Things to think about when deciding what portion size to choose.
1. Is the cake for a special occasion or a wedding? If its a special occasion cake consider party or dessert slices. If its for a wedding, the standard is generally a finger slice but you can also request for dessert size.
2. If your cake is for a wedding, is your cake going to be the main dessert or will it be part of a larger dessert spread? If its the main dessert I would recommend going for the dessert size, if its part of the dessert spread then go for the finger slice.
By taking these factors into account, you can make an informed decision regarding the appropriate portion size for the cake.

I am so happy to see my facebook family growing and I wanted to take a moment to introduce myself to all of you who have recently joined. My name is Michelle, and I am a cake decorator with a passion for creating edible works of art.
My goal is to bring joy and smiles to every celebration by creating edible masterpieces that not only look stunning but tastes exceptional.
3 fun facts about me:
1) Even though my favourite colour is yellow. I love the colour gold and you will find it on practically all my cakes whether it’s a light shimmer to highlight flowers down to bold gold accents. I just can't resist incorporating this luxurious hue into my creations. It's my signature touch, my way of adding that extra sparkle and radiance to every cake. When you look at my page next see if you can spot the gold.
2) I find inspiration from anything and everything, if something catches my eye I will be snapping away. On my phone you will find lots of pictures of precious moments with family and friends, delicious cakes and random pictures of buildings, marble patterns, captivating textures and fascinating wallpapers mixed in between lol. I love capturing those unique elements, storing them for future cake inspiration.
3) My last fun fact is how I started my baking journey. In my mid-20s I decided make some cupcakes for my husband’s birthday. I didn't have all of the baking equipment just a simple recipe. Let's just say those cupcakes didn't turn out picture-perfect but they did deliver an explosion of flavour!
One of my closest friends showered me with the most amazing compliments and how I should make more. It was at that moment I knew I had to keep going. Fast forward to today, after splurging on professional equipment, experimenting with countless flavours and attending various courses to level up my skills, I am beyond grateful to turn this passionate hobby into a full-blown profession!
