Meal Prep! Now this is new for me. Meal planning I’m used to doing me me, my family and my clients but I think this will be a game changer! Making 4 days dinners takes the same time as doing I meal, not only will I save time but I’ll be less likely to go off plan if it’s there ready and waiting. And soooo much healthier and cheaper than ready meals. • Chicken thigh with garlic granules air fried • Bulgar wheat with vegan stock • Green beans and tomatoes I shall finish them off with satay or teriyaki sauce each day. My easy Breakfast Quiche Cups. • whisk eggs with a splash of milk. • spray muffin tray with low cal oil spray. • fill muffin tray 3/4 full with egg mix. • add chopped cherry tomatoes or ham (or whatever you fancy!). • add a sprinkling of grated cheese. • cook in the oven till nice and golden and mixture is firm. Hearty Leek & Potato soup perfect for this weather! I cheated and bought some pre prepared vegetables. Fry them off in a teaspoon of butter, add 1pint vegetable stick and simmer till cooked. Totally delicious!!
