Hoppers on film 📸
Some recent moments as captured by the team.
BBQ Hispi Cabbage + Kiri Hodi.
Kiri Hodi, which translates to milk curry, uses a rich coconut milk gravy as its base and can be served with nearly anything. Regulars at Hoppers will spot this Kiri Hodi from our Mussel Hodi served at King’s Cross but at Marylebone, we serve it with BBQ grilled Hispi Cabbage and a chili oil to cut through the sweetness of the curry.
Banana Leaf Roasted Lemongrass Bream at King’s Cross.
This dish certainly packs a punch. We wrap a whole sea bream in banana leaves before steaming (a very common trick and very popular across India) to make sure all the flavours cook inside the parcel of fish. It’s the perfect dish for sharing alongside our selection of short eats.
If you’ve visited Hoppers, you would have seen The Glossary on the back of our menus. This feature has sparked many conversations among diners and team members.
Over the next few weeks, we will showcase our favourite ingredients, spices, dishes and drinks native to Sri Lanka and South India as part of a Glossary series.
We’d love to hear in the comments what you think of these and any you’d like to see 🥥
Mussel Hodi on the menu at King’s Cross.
Mussels are one of those underrated and sustainable ingredients that often get overlooked in curries. We steam rope-grown Scottish Mussels in creamy Kiri Hodi and serve them over string hoppers with a samphire sambol.
The essential spice and curry powders.
The word ‘curry’, has become synonymous with so many dishes (particularly from the Indian subcontinent) and finds its roots in the Tamil word ‘kari’. Different regions of Sri Lanka tend to have slightly different blends of curry powders and it’s not uncommon to find recipes calling for vegetable, meat, fish or even fragrant curry powder. At Hoppers, we use lots of different spice blends but the three essential ones we use in almost everything are Roasted and Unroasted Curry Powder and Jaffna Curry powder - all of them pack a punch.
You can find our three essential curry powders at Selfridges or buy them via the link in our bio.

New to the menu this week - Watermelon Margarita.
A firm favourite for summer, we make our watermelon liqueur in-house using fresh watermelon juice that is clarified overnight, finishing it off with our homemade green chilli salt rim for an extra kick. On the menu at King’s Cross.
Black Pork Kari
A classic on the menu at all three restaurants. It was one of the first Sri Lankan dishes that really blew us away. The almost coffee-like dark roasted spice powder, balanced with the fat from the pork belly and smoky citrus from the goraka, are a match made in heaven.

Whilst travelling around India last month, our Founder met with the inspiring team at , an Indian Specialty Coffee and Craft Cacao brand that aims to highlight produce from the Indian Subcontinent.
As part of Subko’s London Pop-Up Circuit this month, we are very proud to host them at Hoppers Marylebone TODAY, where they will be doing a tasting of their Specialty Microlot coffees and chocolate bars from different terrains in the Indian subcontinent. If you’re in London, pop by Marylebone today to try some.
Kothus, kottus or kothu rotis are arguably the most popular street food in Sri Lanka and are the best thing to eat after a big night out in Colombo.
At Hoppers our Kothus have always been at the heart of the menu, right there alongside Hoppers and Dosas. Over time we have experimented with
various versions of the kothu, from venison to duck and more. The traditional lamb kothu, however, will always remain the best and never ceases to be the most comforting post-shift meal, alongside a bowl of chilled yoghurt or raita.
The Southside Swizzle at King’s Cross.
The dining room and bar at the restaurant are heavily inspired by our journey from Colombo to Galle, along the south-west coast of Sri Lanka. One of the highlights of
our pre-launch research trip was a takeover of the Jetwing Lighthouse Coat of Arms bar in Galle. We first created this drink for the event, and it proved
to be so popular amongst locals that we decided to give it a top spot on our drinks list at the new restaurant. Now it’s a staple and perfect for sunny afternoons on the terrace.
