Relive Oscar Wilde’s remarkable story through flavours and tastes introduced in our latest Soho Story cocktail, Taboo.
Inspired by Oscar’s Irish heritage, Irish whisky is the core spirit of this drink. Also derived from this fact, we have sweetened the cocktail with a faux maple spirit that is made using starch from Ireland’s signature produce, potatoes.
Signifying his love for his muse, Bosie Douglas, we have used rose to lift the cocktail flavours and provide top notes. Wilde often quoted ‘Douglas’s rose lips’ which inspired the final touch of this cocktail.
A beautiful tragedy some may say. A man with so much love and pride was led to his death for that very reason.

Transforming the idiosyncratic work of Damien Hirst into a truly delectable cocktail, Cyan Wong has created a masterpiece.
Representing Damien’s love for the west country, the primary flavour profile is apples. To portray Hirst’s key themes of life and death, these have been shrunken through a process of Nixtamalization, concentrating their flavours and furthermore developing umami and anise notes.
Top notes of cherry blossom represent his famous painting of the same name and are contrasted with flavours of Nori and seawater to balance and directly reference his most famous shark in a tank: “The Physical Impossibility of Death in the Mind of Someone Living” piece.

Inspired by the remarkable Damien Hirst, whose deliberately provocative art gets people talking, just like this delicious new cocktail.
Hirst is a British assemblagist, painter, and conceptual artist whose controversial work addresses vanitas and beauty, death and rebirth, and medicine, technology, and mortality.
Showing his love for Soho, he invested millions of pounds to build his headquarters on Beak St., where he can be found if he is not visiting the west coast in cider country.
