✨Filipino lechon, a slow roasted pork belly roll; filled with lemongrass, garlic, spring onion, bay leaves, crush pepper and salt. It’s brine overnight before slowly roasting it until the skin is nice and crispy.

👉🏽FUN FACT! Mae’s lechon is a tribute to her heritage a nod to Filipino people. Her signature Lechon was featured in Mary Berry’s Easter Feast show in BBC2 back in 2016 and was shown every year for at least 3 years! 😂

🇵🇭 Her recipe is inspired by Cebu and Leyte lechon. She developed it to be as close as possible to the original Cebu lechon.
