At counter 71 we prioritise cooking everything possible to order to ensure maximum respect of the produce that British farmers, fisherman and producers work tirelessly to get to us.
We prepare sauces, purées, tarts, croustades, garnishes and much more fresh everyday with some things being prepared right in front of the guests minutes before being served to them. This way we respect every link in the food chain.

For one night only Paradise Founder & Creative Director Dom Fernando will be joining forces with Joe to bring a truly unique experience to counter 71; A menu full of the finest British produce with some fiery island twists.
Located in London’s illustrious Soho, Paradise combines Sri-Lankan and British produce into a unique culinary experience, giving a distinctly contemporary UK nuance to Sinhalese cuisine that is not bound and challenges traditional expectations.

The next chef of our in house guest chef night is Jay Hsu, our Chef De Partie.
From Taipei City, Taiwan, Jay boasts an incredible line up of past experience. Having cut his teeth at 1 * Ad Astra and 2* Logy. The latter being a fusion of Japanese and Taiwanese cooking. Jay will call on the knowledge he has procured over the years to bring a truly memorable night of Japanese & Taiwanese tastes and techniques. As always the menu will have British produce as its centre stage.

The next chef of our in house guest chef night is Zain Yi Puah, our Demi chef de Partie.
Zain was born in Malaysia and spent part of his upbringing there before moving to Somerset. At the age of 18 Zain decided to pursue a career in the kitchen. He is currently still studying at culinary school whilst working at counter 71. At such a young age Zain boasts impressive internships at 1 star Kol, Akoko & Sola. He then went on to work at Sessions Arts Club before joining the team at counter 71.
Zain will draw on his heritage and time spent in Malaysia and also his time in Somerset and London to craft a truly unique menu with Malaysian flavours mixed with worldly techniques and British produce.

Laver - Razor Clam - Elderflower
Our second snack on the menu. A seaweed tart shell made out of dehydrated laver, chicken emulsion, razor clams dressed in an elderflower vinegar gel, sea lettuce powder and fried sea truffle.
Reservations for June will open 11am Wednesday 1st May. June is the month where the British landscape really starts to provide the bright and the beautiful. Resulting in rapid menu changes and our race to preserve what we can in preparation for later in the year.

We take alcohol free options just as seriously as wines & cocktails . We have a head chef and a bar manager who both don’t drink so it’s important for us to provide non alcoholic options that are just as interesting. that said, we made this tart on our opening night and chef .alyn, who was there, said it was one of the best custard tarts he’s ever eaten. and when alyn williams talks, you listen.
