I Friarielli sono una delle specialità più autentiche della cucina napoletana, e rappresentano un vero e proprio simbolo della tradizione culinaria partenopea. La parola "friariello" deriva dal verbo napoletano "frijere," che significa friggere, poiché questo ortaggio viene tradizionalmente cucinato in padella con aglio, olio extravergine d’oliva e peperoncino. I friarielli hanno origini antiche: coltivati nei campi attorno alla città di Napoli già nel XVI secolo, venivano apprezzati dai contadini per la loro semplicità e per il loro sapore deciso.

Oggi, i friarielli sono spesso accostati alla salsiccia in un piatto che è diventato un classico delle trattorie napoletane.
