Recipe
1 bunch Purple Sprouting Broccoli
250g Datterini Tomatoes
1 bunch Basil
Chilli Flakes
2 Eggs
200g Sourdough
100ml Olive Oil
50ml Red Wine Vinegar
50g 24-month aged Parmigiano Reggiano cheese
2 cloves Garlic (peeled and crushed)
Maldon Salt
Tear the sourdough in to chunks and fry in olive oil over a medium heat until crisp and golden brown.
Boil the eggs for 8 minutes, cool down and peel.
Cook the tomatoes in olive oil over a medium heat, until slightly softened and blistered, add in garlic and a good pinch of chilli flakes and cook down for a few more minutes.
Prepare the purple sprouting broccoli, by trimming the ends and peeling the bottom half of the stalk. Blanch the broccoli in salted water for 1 and half minutes, so it’s still got good bite.
Finally toss everything in a bowl, season with red wine vinegar.
Plate up and cover in freshly grated Parmigiano Reggiano cheese and more olive oil.

Another amazing recipe by using only the best from
Dover Sole Meuniere 🐟 with crushed potatoes.
This is a perfect dish for two. Simple fish, banging potatoes, what more do you want!
Dover Sole Meuniere
Serves 2
1 x 6-800g Dover Sole
100g Plain flour
80g Butter
1 handful Parsley
2 tbsp Capers
1 Lemon, juice and zest
Crushed Potatoes
8 small potatoes, such as rattes
2 cloves Garlic, peeled and crushed
2 tbsp Chives
Olive oil
Maldon Salt
Prep the Dover sole.
Season the flour with salt and pepper.
Cook the potatoes in boiling salted water for about 8-10 minutes until easily pierced with a knife. Drain the potatoes and let them cool for 10 minutes.
Crush them with the palm of your hand so the skin cracks.
Place a frying pan over a medium heat, add olive oil and the potatoes, cook until golden brown on one side and turn them. Add in the crushed cloves of garlic.
To cook the Dover Sole, pat the skin dry and dredge in the seasoned flour. Place a large frying pan over a medium heat, add the olive oil, and then add the fish and 20g of the butter. Cook until golden brown on the one side about 5-6 minutes, then turn and allow to cook gently for 2-3 minutes. Turn off the heat and allow the fish to rest.
Remove the fish from the pan and place on a chopping board. Remove the top 2 fillets with a spatula and then remove the bones, clean up the fillets and season with salt and pepper.
In the fish frying pan, add the remaining butter and place over a medium high heat, until the butter is brown, add in the chopped parsley, capers, lemon zest and lemon juice.
Plate the fish on a large plate and cover with butter sauce, and serve with the crushed potatoes.
We love this recipe he’s created with some of our most simple and fresh products. This is his warm butter beans with tomato sauce and shaved salad of fennel, olives, capers and lemon and it’s a perfect way to continue your vegan journey beyond January.

Ingredients
• 1 large cauliflower, cut into florets
• 100g plain flour
• 180ml plant-based milk
• 2 tsp garlic powder
• 1 tsp onion powder
• 1 tsp smoked paprika
• 125g Notorious Nooch’s Cheesy Immature Nooch
• 3 tbsp plant-based butter
• 80ml hot sauce
• Vegan sour cream, to serve (optional)
• Salt, to season
Method
1. Preheat oven for 200c/180c fan.
2. Mix together the flour, plant-based milk, garlic powder, onion powder, smoked paprika and a pinch of salt into a thick and smooth batter.
3. Add Notorious Nooch’s Cheesy Immature Nooch to a bowl and coat each floret in the crumb before placing on a baking sheet.
4. Place in the oven for 40 minutes, flipping halfway.
5. Meanwhile, melt the plant-based butter on a low heat and pour in the hot sauce. Mix until well combined and simmer for 1-2 minutes.
6. Once the wings are cooked, toss them in the buttery hot sauce.
7. Serve with vegan sour cream and enjoy.
