Bonjour, mes amis! 🇫🇷 Today I have a special treat for you: a homemade galette de rois, or king cake, made with flaky puff pastry and rich almond cream. 😋 This is a traditional French dessert that is eaten on Epiphany, the day when the Three Kings visited baby Jesus. 🌟

Congratulations on our bakery’s third anniversary in Muswell Hill! 🎉🎉🎉

It’s been an incredible journey so far, and I’m grateful for the opportunity to serve this wonderful community. I still remember the day we opened our doors, and the excitement and anticipation that came with it. Since then, we’ve had the pleasure of serving countless customers, and we’ve been humbled by the support and encouragement we’ve received - it took so much hard work, and sleepless nights to get the store open, but so worth it.

As we celebrate this milestone, I want to take a moment to thank our loyal customers, who have been with us every step of the way. Your custom and feedback have been invaluable, and we couldn’t have done it without you.

I also want to thank my hardworking team, who have been instrumental in making our new store a success. Your dedication and commitment to excellence are truly inspiring, and I’m proud to work alongside each and every one of you.

As we look to the future, we’re excited to continue serving our community with the same passion and dedication that we’ve always had. We have some exciting new offerings in the works, and we can’t wait to share them with you.

It’s that Simnel Cake time of year again! Simnel cake is a light fruit cake, with a marzipan center.. topped with Marzipan… if you love marzipan this is for you.. and we’ll if you don’t.. we’ve got chocolates!

Mince Pies Mince Pies - we’re all too knackered to come up with a Witty caption… You’ll just need to come and try one 🎄😇

Three of the six stages of Stollen!
- Soak the Cranberries and Almonds in Rum, Lemon and Orange Pure over night
- Mix a pre-ferment of milk, flour and yeast, leave this to develop
- Mix the preferment with yet more flour, milk, butter and yeast
- Add in the fruit and mix through
- Bulk ferment the dough to further develop the flavour
- Weigh and shape, placing a rich marzipan in the centre
- Prove, Bake and Cool..
- Dip in melted butter, and dust with icing sugar!
