Nobody can remember when we last did a full kitchen rebuild but I think it was just after the war. The new space is going to be absolutely amazing and it is being fitted with all the most brilliant new toys.
Right in the middle will sit an exciting chefs zone where we will be able to create entertaining experiences for our guests (those that are game), right in the heart of the action. It’ll be quite an adventure.
The main island is a massive behemoth of metal and electronics covered in a hood that looks like Apollo 19. It boils 50 litres of veal bone stock from cold in 0.2 seconds, and I hope it all works without taking down London’s electrical grid. The weirdest thing about it is that it is in exactly same place as it was in 1910, when Gasc (who trained under Escoffier) was the head chef.
As for The Dining Room itself, what is it going to look like?
Marvellous Russel Sage designed it. We only had one briefing meeting which went a bit like this:
Russel: So what are we trying to do here?
Us: We want to create an opulent space that makes our guests feel like Cézar Ritz has been brought back to life, and that he’s hungry to get back in the game with a statement restaurant. What debauchery and decadent madness would that lunatic create if he were alive today?
Russell has taken this very seriously.
We think our guests deserve a night out (a real one) and the new restaurant aims to provide it. At some time during your dinner, flames will go past your eyeline (don’t panic!). We plan to chivvy things along further with elegant costumes, a little music, a lot of twinkly stuff, a small but barely controlled hint of bling, and seating that Kings, Queens, Rappers and Presidents alike will want to canoodle in. Why does Michelin star food have to be served in surroundings that do not uplift and excite?
And what about that food? It’s going to be an evolutionary step, carefully taken and we can’t wait for you to try it. Two of my favourite dishes are.: Cured Cornish monkfish, mussels, seaweed, gooseberry and herb emulsion; Dry aged Aylesbury duck, plum glazed leg, spiced pain perdu and hazelnut. That sort of thing! Plus a lobster omelette here and a beef Wellington there.
Come May 20th, we sincerely hope that you will enjoy your new Dining Room, and that Great Grandpa Goring will giggle just a little while turning in his grave.
