A recipe to impress πβ¨
Our Strawberries and Cream Baked Alaska recipe is the ideal dinner party treat! Made up of just 5 ingredients, this recipe is very affordable β€οΈ

Ingredients:
- 1l clotted cream ice cream
- 150g strawberries, roughly chopped
- 90g self-raising flour
- 3 egg whites
- 250g caster sugar
Method:
1. Preheat the oven to 165Β°c (fan)
2. Set 120g of ice cream to one side for the sponge base
3. Place the remaining ice cream in the large mixing bowl and mix it with the spoon to soften it up. Stir in the chopped strawberries before spooning the whole mixture into the cling film lined bowl. Place the whole thing (in the bowl) in the freezer while you make the sponge base
4. To make the sponge base, pour the 120g of reserved ice cream (this should be melted by this stage) into the large mixing bowl and combine with the self-raising flour and 50g of the caster sugar until a smooth batter is formed. Pour the batter into the lined cake tin and bake for 20 minutes until springy to touch. Allow to cool completely
5. When the sponge is cool, youβre ready to make the meringue. At this stage you should also heat your oven to the maximum temperature it will reach. Pour the egg whites and remaining 200g of caster sugar into the (clean) large mixing bowl and place the whole thing over a saucepan of simmering water
6. Whisk the egg whites and sugar together either by hand or with an electric whisk. You want to see the steam against the outside of the bowl dissolve the sugar into the egg whites. This will take around 5 minutes, and you can tell when this is done when you can no longer feel grains of sugar when you rub the mixture between two fingers. (It will get warm, so be careful)
7. Once the sugar is dissolved, remove from the heat and whisk up the meringue (again, by hand or electric hand mixer) until thick and glossy and stiff peaks are formed when you lift the whisk from the mixture
8. To assemble, place the sponge layer on your heatproof serving plate, remove the ice cream dome from the bowl and place on top. Spread the meringue all over, creating peaks and swirls and then bake in the oven for 3-4 minutes, until the meringue just starts to brown
9. Let it cool for a few minutes, then slice with a hot knife to serve

Our affordable Olive & Rosemary Focaccia recipe is packed with flavour and nutrients π«
Ingredients:
- 1 packet dried yeast, 7g
- 1 tsp sugar
- 400ml warm water
- 550g strong bread flour
- 2 tsp salt
- 4 tbsp olive oil
- 1 tbsp dried or fresh rosemary, chopped
- flaky salt
- 120g pitted olives
Method:
1. In a jug, measure out the warm water, add the sugar and dried yeast, stir, and set to one side
2. In a large mixing bowl, combine the flour and salt. Make a well in the centre, pour in the liquid and bring together with the fork to form a loose dough, making sure there are no pockets of dry flour left
3. Wipe out the jug and mix the olive oil and rosemary together. Pour half into a baking tin and use your fingers to completely grease the base and sides. Scrape the dough into the greased tin
4. Push the dough out to the corners of the tin with your fingertips to create an even layer. Cover with a damp tea towel or cling film and leave in a warm place to prove for at least an hour
5. Once proved, heat the oven to 180Β°C (fan), pour the remaining oil over the top of the dough and poke holes all over with your fingertips, then push the olives into the cavities
6. Bake for 35-40 mins, until golden on top. Remove from the oven, allow to cool, run a knife around the edge to loosen if necessary, lift the focaccia out, slice and serve

Brighten up your midweek with our easy peasy Gin and Tonic Drizzle Loaf ππΈ
This zesty sweet treat is super simple to create and it uses minimal equipment!

Ingredients:
- 1 grapefruit/orange OR 2 lemons/limes
- 175g self-raising flour
- 175g caster sugar + 75g for soaking syrup
- 3 eggs
- 120ml gin, split into 50ml and 70ml
- 75ml tonic water
- 150g icing sugar
Method:
1. Preheat the oven to 165Β°c (fan)
2. Take whichever citrus you are using and cut half into slices for decorating (Β½ grapefruit/orange or 1 whole lemon/lime). Zest and juice the other half using the fine grater/zester to zest and the fork to get the juice from the fruit
3. In the large mixing bowl, combine the self-raising flour, citrus zest and 175g of caster sugar
4. Add the butter, eggs, 50ml of gin, 2 tbsp of citrus juice and mix with the electric hand whisk until smooth
5. Pour the batter into the lined loaf tin and bake for 35 minutes until golden and springy to touch. Remove from the oven but leave in the tin
6. While the loaf is cooling slightly, pour the remaining citrus juice, tonic and 75g sugar into the saucepan and heat on a medium-high heat for 5-8 minutes until the sugar has completely dissolved. Allow to cool slightly before stirring in the remaining gin (70ml). Set aside 3 tbsp of the syrup for the glaze
7. Poke the loaf all over with the fork and drizzle with the syrup from the saucepan. You can do this while the loaf is still warm
8. When the loaf is completely cool, remove from the tin.
9. Wipe clean your mixing bowl and then use it to combine the 3 tbsp of reserved syrup with the icing sugar to make a glaze and pour over the top of your loaf, slightly pushing it down the sides with the end of a spoon to create a drip effect
10. Decorate with citrus slices and serve

Ingredients:
- 110ml warm water
- 3-4g instant dried yeast
- 200g strong white bread flour
- Β½tsp sugar
- ΒΌtsp salt
- 50g passata
- Β½tsp dried herbs
- 50g ball mozzerella
- handful basil leaves
Method:
1. Place the frying pan, skillet or roasting tin in the oven and preheat to 200Β°C. In the measuring jug, combine the warm water and yeast
2. Weigh the flour, sugar and salt into the mixing bowl and thoroughly mix before pouring in the yeast and water
3. Bring the dough together with your hands and then, on a floured surface, knead for a few minutes before returning to the mixing bowl. Leave in a warm place for 10 minutes to prove
4. Lightly flour your surface. Once the dough has proved, turn it out onto the floured surface and roll into a circle the size of your frying pan or skillet, or shape into a circle that will sit nicely in your roasting tin. Use oven gloves to remove the pan, skillet or tin from the oven and transfer the dough into it
5. Being careful of the hot pan, skillet or tin, spoon the passata on the dough, sprinkle on the dried herbs and torn mozzarella
6. Use oven gloves to return the pan or tin to the oven. Bake for 10-15 minutes and top with fresh basil leaves before serving

Ingredients:
- 150g self-raising flour
- 100g salted butter, chilled and cubed
- 75g grated cheddar cheese
Method:
1. Preheat the oven to 200Β°C (fan) and line your baking tray with parchment.
2. In a mixing bowl, crumble the grated cheese with your fingers to make it as fine as possible. Remove 25g and set to one side.
3. Add the flour, followed by the butter into the remaining cheese, then bring it together with your fingers until a dough is formed.
4. Tip the dough out onto a lightly floured surface and roll it out to a thickness of about 5mm, then cut out rounds using the cutter or alternative.
5. Place onto the baking tray, then sprinkle each biscuit using the remaining 25g of crumbled cheese.
6. Bake for 10-12 minutes until golden, then allow to cool before serving.

Ingredients:
- 180g light brown sugar
- 75g granulated sugar
- 90g unsalted butter, melted + a little extra for greasing
- 1 egg, lightly beaten
- 1 medium-sized banana
- 150g plain flour
- ΒΌ tsp bicarbonate of soda
- 150g milk or dark chocolate chips or a bar cut into chunks
- sea salt to sprinkle (optional)
- ice cream to serve (optional)
Method:
1. Lightly grease the skillet with unsalted butter and set to one side
2. In a large mixing bowl, combine the two sugars and mix in the melted butter, followed by the egg
3. Mash β
of the banana with a fork and add to the mix, dicing up the remaining third to sprinkle on top at the end
4. Add in the flour and bicarbonate of soda and mix until a thick batter forms
5. Stir in β
of the chocolate chips then transfer the batter to the skillet
6. Top with the remaining chocolate chips and banana pieces then place on the BBQ. If your BBQ doesnβt have a lid, cover the cookie with foil for a more even bake
7. To serve: Sprinkle a little sea salt (optional) divide and spoon the cookie into bowls and serve warm with vanilla ice cream

A sweet treat recipe that will make the family go nuts!
These Pistachio & White Chocolate Ice Cream Cookie Sandwiches are easy peasy to make πͺπ¦

Ingredients:
- 120g unsalted butter
- 225g light brown sugar
- 1 egg
- 300g plain flour
- Β½ tsp bicarbonate of soda
- ΒΌ tsp salt
- 300g white chocolate, roughly chopped
- 100g pistachios, roughly chopped
- 1l vanilla ice cream
Method:
1. Preheat the oven to 165Β°c (fan)
2. In the large mixing bowl, cream together the butter and sugar with the electric hand whisk
3. Add the egg and mix until combined, before adding the flour, bicarbonate and salt. Mix well with your hands. When the dough starts to come together, add 150g chopped white chocolate and 50g of chopped pistachios. Bring together to form a ball of dough
4. Roll the dough into 12 evenly sized balls and place on the lined baking tray, 6 at a time as the cookies need space to spread as they bake
5. Bake in the oven for 7 minutes, turn the tray and bake for a further 7 minutes then allow the cookies to cool completely. Repeat with the rest of the cookie dough balls.
6. When the cookies are cool, sandwich two together with a generous scoop of ice cream and decorate as you wish β melt the remaining white chocolate in the microwave in 10 second increments (stirring between each to be careful that it doesnβt burn) and dip them, roll them in the remaining chopped pistachios, do both or leave plain!

Ingredients:
- 2 large eggs
- 200ml milk
- 120g plain flour
- Butter for greasing pan
- Fillings of your choice
Method:
1. In the large mixing bowl, combine the eggs, milk and flour with the whisk to form a runny batter
2. Place your pan over medium heat and grease lightly with butter before spooning in about 2-3 tbsp of batter and swilling it around to form a thin, even crΓͺpe
3. Return the pan to the heat and leave to cook for 30 seconds, then using the spatula, or flipping if you feel confident to, flip the crΓͺpe over and cook the other side for a further 30 seconds
4. Place the crΓͺpe on a plate and repeat steps 2 and 3 until all of the batter has been used, stacking them up as you go
5. To fill, take one of the crΓͺpes, place it back in the pan and sprinkle with grated cheese and ham/mushrooms. Leave for 30 seconds, then fold the crΓͺpe in half and then half again to create a quarter fold. Flip the whole thing over to brown the other side lightly and ensure all the cheese has melted, then serve

Ingredients:
- 150g plain flour
- 150g caster sugar - split into 50g and 100g
- 200g butter - split into 2 x 100g
- 150g ground almonds
- 1 egg
- 200g raspberry jam
- Handful flaked almonds
- Sprinkle icing sugar to dust
Method:
1. Preheat the oven to 165Β°c (fan)
2. Put all of the plain flour and 50g of caster sugar in the mixing bowl before rubbing in 100g of unsalted butter with your fingertips. When the mixture resembles crumbs, pour it into the lined traybake tin, spread it evenly and press it down so the crumbs loosely join together
3. Bake the base for 15 minutes
4. While the base is baking, combine the remaining 100g of butter, 100g caster sugar, ground almonds and the egg in the mixing bowl with a spoon to make the frangipane topping
5. When the base has had its 15 minutes, remove it from the oven and add the jam, spreading it with the back of the spoon to make an even layer over the top, followed by all of the frangipane mix (this will be a thicker layer) and a sprinkling of flaked almonds before returning to the oven for a further 30 minutes
6. When the traybake is golden on top, remove from the oven and allow to cool completely before removing from the tin
7. Dust the whole thing with icing sugar, slice into bars and top with more flaked almonds. Enjoy!

β 175g plain flour
β 1 tsp bicarbonate of soda
β 150g grated cheese
β 50g baby spinach - shredded
β 100g tinned sweetcorn - drained
β 2 eggs
β 150g unsalted butter - melted
β 150ml/g milk
Method:
1. Preheat the oven to 180Β°C
2. Combine the flour, bicarbonate, cheese, spinach and sweetcorn in the mixing bowl
3. Add the eggs, melted butter and milk and mix it all together
4. Divide the batter evenly into the muffin cases
5. Bake for 20-25 minutes until risen and golden. Serve warm

The ultimate Chocolate Fudge Cake π«π

Ingredients:
- 175g self-raising flour
- 1 teaspoon bicarbinate of soda
- 150g light brown sugar
- 50g cocoa powder
- 2 eggs
- 150ml sunflower oil
- 150ml milk
- 300g dark chocolate
- 150g double cream
Method:
1. Preheat the oven to 160Β°C
2. In the mixing bowl, combine the flour, bicarbonate, sugar and cocoa powder
3. Add in the eggs, oil and milk and whisk everything together until no lumps remain
4. Divide the batter into the two cake tins and bake for 20-25 minutes until springy in the centre. Allow to cool completely before icing
5. Whilst the sponges are cooling, melt the chosen chocolate for the icing in the microwave (30 second increments and stirring to prevent burning). Once it is melted completely, pour in the cold double cream and combine until glossy and smooth
6. Sandwich the two sponges with the icing before covering the top and sides. Decorate as you wish

β 200g self-raising flour
β 60g unsalted butter - chilled and cut into cubes
β 30g caster sugar
β 2 eggs (one for the eggwash)
β 2 tbsp milk
Method:
1. Preheat the oven to 180Β°C (fan) and line the baking tray with the parchment
2. In the mixing bowl, combine the flour and sugar then add in the butter cubes and work them in with your fingers
3. Once a crumb consistency has been achieved, make a well in the centre and add 1 egg and the milk. Bring it all together until just combined to form a dough, being careful not to overwork it
4. Tip the dough out onto a lightly floured surface and roll out to a 2 cm thickness. Cut out rounds, bringing the offcuts together and re-rolling until you have 8 rounds
5. Place them all on the baking tray, rub the tops with eggwash using your finger or a pastry brush if you have it, and bake in the oven for 10-12 minutes until risen and golden on top
6. Allow to cool before serving with jam and clotted cream
