They collaborate with as many small businesses as they can. Using free-range meat from Vicars Game, Wild farmed flour, and vegetables from various farmer’s market producers & alcohol from the kernel or Oliver’s fine wild-farmed apple cider.

Each week Evie and Tom will be serving their rich, velvety Buttermilk Ice Cream and Organic Macaron Ice Cream Sandwiches, dipped in melted organic chocolate and roasted almonds.
Tom’s farm-to-table ice cream is free from ultra-processed foods, made using protein-rich buttermilk, cream, free-range eggs, less sugar and whole foods. But that's not all, their ice cream is designed to tackle the dual issue of food waste and hunger by creating delicious waste-saving recipes and raising money for food charities.
Tom won a grant from the charity to save food waste. He created a zero waste, regenerative, whole food ice cream using the funds and is debuting his product at Brockley Market for the Summer. Tom works with regenerative and organic farmers and producers to help them design waste out of the food system, bringing value to the ugly, the unwanted and unloved. For example their ice cream is made from exceptionally high quality buttermilk – that would otherwise have gone to waste simply due to a lack of demand – which they buy from a Great Taste award winning farm in Devon.

HANDMADE FLATBREAD STUFFED WITH: SMOKY CHAR-GRILLED CELERIAC & HOMEMADE HALOUMI SKEWERS W/ A STICKY LOCAL HONEY & HOUSE HARISSA GLAZE
Cubed celeriac dry rubbed w/ a freshly ground harissa spice blend, slow grilled until soft and charred before being basted with local honey. Mike and Ollie are making their own halloumi style cheese using locally produced milk too, as if they didn’t have enough to do.
