Ramen 🤝 Thai Red Curry
We’ve joined forces with one of London’s best Thai restaurants, for our brand new Red Curried Fishcake Ramen special 🔥
Bringing the heat of Thailand to our signature dish, Ken with Farang’s and have cooked up a fragrant, spicy ramen that perfectly blends Farang’s Thai flavours with our broth and homemade noodles.
For the base, our chicken broth is enriched with a spicy red curry paste from Farang’s own brand of fresh curry pastes and sauces, . It’s full of red chilli, garlic, shallots, lemongrass, galangal, fish sauce, shrimp paste and coriander. We then top the ramen with Farang’s homemade Thai fishcakes, bean sprouts, curry leaf, Thai basil and a soy-marinated Clarence Court egg, seasoned with curry leaf salt. 😍

A new special is always a good idea, especially when it’s this fave from last year! 😍
Back by popular demand is our Teriyaki Pulled Pork Ramen 🍜
We slowly cure Dingley Dell pork shoulder overnight in mirin, soy sauce and sake for deep, rich umami flavours, before braising for six hours so the meat falls apart and then covering in a teriyaki glaze.
This teriyaki-glazed pulled pork sits on our pork broth enriched with lardo and a soy sauce base with thin-cut Tonkotsu noodles. We then add crisp and leafy choy sum, menma, nori, sesame seeds and half a seasoned Clarence Court egg.

NEW YEAR, NEW SPECIAL😍
Our first special of 2024 is 100% vegan and 100% banging.
We’ve worked with Meriel and the team at to pack all the flavour of their legendary birria tacos into a bowl of ramen to bring January (and February!) into full colour 🌈
The base of our ramen is packed full of the flavours of a birria consommé. Layers of flavours of guajillo, ancho and arbol and chipotle chillies, plus tomatoes, cumin and garlic to transport you to somewhere far more vibrant than the UK in January.
The umami-rich base is topped with our classic vegan konbu & shiitake broth and classic homemade noodles. Club Mexicana’s legendary ‘beef brisket’ tops the ramen, with crispy tortillas for dipping or scooping, and pickled chillies, radish, salsa and lime for that fresh zing.
And if dry Jan is not your thing, we’ll be serving up Club Mexicana’s epic frozen jalapeño mango margaritas in our Shoreditch restaurant 🍹

The Kricket x Tonkotsu collab is finally here! 🙌
We’ve teamed up with the legends from Kricket for our new special, bringing the flavour and heat of Southern India to our signature dish, cooking up a Pandhi pork curry ramen, available at all Tonkotsu restaurants from today.🔥
A Pandhi curry is from South India and is known for its sweet and sour flavours, which Will and Ken have matched up perfectly with our Tonkotsu broth and thin-cut noodles. 🍜
The spice blend has a mix of cumin and mustard seeds as well as cinnamon, cloves and star anise, which we make into a base for our ramen before adding our tonkotsu broth. We then use the same spices alongside chilli, tamarind and coconut milk to marinate and cook diced pork belly that tops the noodles. The ramen is finished off with crispy-fried ginger and curry leaves, and pickled fennel and chilli to cut through the rich flavours, and of course half a soy-marinated Clarence Court egg.

We’ve teamed up with the legends at for a cracking autumn special, combining the flavours of south India with our classic tonkotsu ramen.
Bringing the flavour and heat of Southern India to our signature dish, Will and Ken have cooked up a Pandi pork curry ramen, with thin-cut homemade tonkotsu noodles in pork broth enriched with lardo and a Pandi curry base. Topped with slow cooked curried pork belly, pickled chilli & fennel, crispy fried ginger & curry leaves and a marinated egg.🤩
Find it at all Tonkotsu restaurants from 29th August but join us to see Ken and cooking up our new special at Tonkotsu Shoreditch on 6th September. Tickets are £25 and includes a collaboration ramen, Tonkotsu's cucumber pickles, and pint of Kirin or a Nori Chilli Margarita. 🍜🍻🥢

☀️ How do you like your eggs in the morning? ☀️
Our ajitsuki tamago (marinated ramen eggs) are a labour of love. We take golden-yolked Clarence Court Eggs Burford Brown eggs and boil them for 6 minutes and 30 seconds, to make the yolk super soft and squidgy.
We then marinate them overnight in a mix of ginger, spring onions, garlic, soy sauce, sake sugar and sea salt to give the egg that perfect sweet, salty, umami-rich flavour.
Big spritz cheers for being over half way through the working week 🎉
Sundays are for a Tokyo ramen with extra Eat the Bits chilli oil 😍
Our second summer special arrives on the menu today! 😍
We think chilled homemade noodles really hit the spot in the warmer weather and so they had to feature again in this special, and we're covering ours with a creamy goma sauce that is packed full of sesame seeds. We then lightly fry a combination of kings prawns, mussels and squid for our seafood fritti, topping the dish off with peashoots, lemon and half a soy-marinated egg. 🍜
Our new special is available at all Tonkotsu Ramen Bars until 27th August.
