Home to stunning scenery and fertile soils, producers in the governate can produce some of the best and rare coffees Yemen has to offer. Coffee is grown by producers as a cash crop to complement their sustenance farming.

⚡ COFFEE DROP! ⚡

Looking for something different? Today at the roastery we kicked off the day with this bold and super interesting coffee from North Sumatra, Indonesia. The wet-hulled process unique to the region really adds something special to the body - ideal for filter brewing methods like the V60 or Chemex 😋 ENJOY!

Variety: SL28, SL34
Altitude: 1600 - 1700 MASL
Harvest: October - December

Farm story:
Situated in the Gichugu division of the Kirinyaga district of Kenya’s Central Province, nearly 1000 members make up the Ngairiama FCS cooperative, each has around 250 coffee trees growing alongside maize, banana trees, macadamia trees and beans. 

The cooperative is Rainforest Alliance certified which has led to better access to training along with greater transparency for the members. There has also been a credit system developed to assist with pre-financing for the cooperative members who can use it to purchase farm inputs or to pay school fees.

The coffee is handpicked by the smallholder members and delivered to the Kamunyaka factory where it is pulped. The first stage of fermentation will last for around 24 hours, after which the beans are washed and sent to the secondary fermentation tank for another 12-24 hours. Once the fermentation process is completed, the beans enter the washing channels where floaters are separated further and the dense beans are cleaned of mucilage. The washed beans will then enter soaking tanks where they can sit under clean water for as long as another 24 hours. This soaking process allows amino acids and proteins in the cellular structure of each bean to develop, resulting in higher levels of acidity and complex fruit flavours in the cup. It is thought that this process of soaking contributes to the flavour profiles that Kenyan coffees are so famed for.
