Bananas in Pyjamas - one of my favourite creations. A simple riff on a Nuclear Daiquiri.

25ml - .rum white rum
25ml - crème de banane
25ml - velvet falernum
25ml - lime
5 drops Ememakule tiki bitters

Thai Dai Daiquiri - weird but delicious. Just a daiquiri with Thai sweet chilli instead of syrup. Come and try.

- Oaxacan rum
- Thai sweet chilli sauce
- Lime

Clarified passion fruit is delicious. Just add 1.7g to litre of passionfruit puree and blender for a minute. Put through a coffee filter and enjoy.

50ml
25ml Apricot syrup
20ml Lemon
30ml Thyme infused milk (for clarification)
Garnish: Apricot half with pecan & maple honeyed granola.

Thai Dai Daiquiri
-50ml El Destilado Oaxacan Rum
-25ml Thai sweet chilli sauce
-25ml Lime
-Thai prawn cracker to garnish

Crazy as a Coconut.

70ml Toasted coconut infused Silent Pool Gin
15ml Belsazaar rosé vermouth.

Inspired by the ‘Mudslide’ and ‘Verte Chaud’. I present to you, the ‘Monkslide’.

-35ml Green Chartreuse
-35ml Fernet Mentha
-35ml Chocolate sauce
-1 cup of crushed ice

Blend for 20 seconds
