Who’s in the mood for a Gelato Sandwich?! 🙌🏼

Made using a creamy no-churn, chocolate ice-cream, sandwiched between our crunchy Organic Orange Biscuits with Cocoa Beans and finished with a drizzle of our Organic Chocolate & Hazelnut Spread, these little sweet treats make for a delicious summer snack! 🍪🍨

🌱 Ingredients: 8
🍽️ Serves: 4-6

INGREDIENTS
🥥 2 x 400ml full-fat coconut milk, chilled overnight
🍫 1/2 cup of Mr Organic chocolate spread
🍯 1/4 cup of Mr Organic agave syrup
🍫 1/4 cup of cocoa powder
✨ 1 tsp of vanilla extract
🍪 1/2 package Mr Organic Orange Biscuits with Cocoa Beans
🍫 90g dark Plant Based chocolate, melted
💫 3 tbsp Plant Based chocolate sprinkles (optional)
⠀⠀⠀⠀⠀⠀⠀⠀⠀
INSTRUCTIONS
1. Remove the coconut milk from the fridge, scoop out the solid cream from each tin and add to a bowl.
2. Using a hand or stand mixer, whip the coconut cream for 2-3 mins until fluffy and light.
3. Add the Mr Organic Chocolate & Hazelnut Spread, agave syrup, cocoa powder and vanilla to the whipped coconut cream. Mix until well combined.
4. Pour the mix into a loaf pan, cover with cling film and freeze for at least 6 hours until the ice-cream is firm.
5. Once ready, remove from the freezer and sit at room temperature for 5-10 mins.
6. Take a Mr Organic biscuit, scoop out a ball of ice-cream and place onto the biscuit. Use a second biscuit to sandwich the ice-cream and press together. Place the ice-cream sandwich in the freezer whilst you prepare the rest.
7. Melt the chocolate and dip in each sandwich, then into the sprinkles. Place each sandwich into the freezer for the chocolate to set - serve and enjoy!

INGREDIENTS
🫘 2 x 400g tins of Mr Organic Chickpeas (keep a small handful of Chickpeas for decoration, optional)
🫙 4 tsp tahini
🧄 2 garlic cloves, crushed
🧂1 tsp crushed sea salt
🫒 6 tbsp Mr Organic Italian Extra Virgin Olive Oil (plus extra for drizzling)
🍋 3½ tbsp Mr Organic Sicilian Lemon Juice
🌶️ Paprika (optional)
🌿 Coriander or parsley (optional)
⠀⠀⠀⠀⠀⠀⠀⠀⠀
INSTRUCTIONS
1. Rinse both tins of Mr Organic Chickpeas in cold water and tip into the food processor (keep to one side a small handful of Chickpeas for decoration).
2. Add the tahini, crushed garlic, salt, Mr Organic Sicilian Lemon Juice.
3. Turn on the food processor and slowly pour in the oil while it runs.
4. When the mixture is fully combined and smooth, tip it into a small serving dish or bowl.
5. Drizzle over Mr Organic’s Italian Extra Virgin Olive Oil and top with a small handful of the whole Chickpeas for decoration.
6. Sprinkle with paprika and top with finely chopped coriander or parsley leaves, for a pop of colour - enjoy!

INSTRUCTIONS
1. Cook the gnocchi according to package instructions and heat up your grill or griddle pan.
2. Thread the grilled vegetables and cooked gnocchi onto the pre-soaked skewers. Brush with olive oil and season with salt and pepper.
3. Grill the skewers for 8-10 mins over medium heat or until the vegetables and gnocchi are cooked and slightly charred.
4. While the skewers are grilling, prepare the Basil Pesto Dip by whipping the Plant Based mayo, basil pesto, and lemon juice together in a bowl.
5. Serve the grilled skewers with the basil pesto dip on the side & get digging in!

🌱 1 stalk celery, finely diced
🧅 1 brown onion, finely diced
🥕 1 carrot, finely diced
🍅 1 tbsp Mr Organic Tomato Puree
🍷 240ml red wine
🥫 1 tin Mr Organic Chopped Tomatoes
🫘 1 tin Mr Organic Lentils, drained and rinsed
🍝 200g Mr Organic Spaghetti
🥕 250ml vegetable stock
🍃 1 bay leaf
🌿 1 large handful spinach
🧂 Salt & pepper to taste

INSTRUCTIONS
1. Start by sautéing finely diced celery, onion & carrot in a tablespoon of olive oil over medium heat for 5 minutes.
2. Add a tablespoon of tomato paste and deglaze with 240ml of red wine. Stir in a tin of Mr Organic Chopped Tomatoes and Lentils.
3. Next, add 200g of Mr Organic Spaghetti alongside the vegetable stock and a bay leaf. Let everything simmer together until the pasta is cooked through.
4. Finally, remove the bay leaf and add a large handful of spinach, then cook for a few minutes until wilted.
5. Season to taste with salt and pepper & serve hot garnished with fresh basil and a sprinkling of Plant Based parmesan cheese.

INGREDIENTS
🫒 2 tbsp Extra Virgin Olive Oil
🧅 1 onion, diced
🧄 3 cloves of garlic, minced
✨ 1 tsp ground cumin
💫 1 tsp ground coriander
✨ 1/2 tsp turmeric
🌶️1/4 tsp cayenne pepper
🫘 2 tins Chickpeas, drained & rinsed
🥕 1 litre vegetable broth
🍋 Zest & juice of 1 lemon
🧂 Salt & pepper
For serving:
🌶️ Drizzle of chilli oil
🌿 Fresh coriander or parsley, for garnish
🥖 Freshly toasted sourdough
METHOD
1. Heat the oil in a pot over medium heat. Add the onion and a pinch of salt, sauté until the onion turns translucent then add the garlic and sauté until fragrant.
2. Add the cumin, coriander, turmeric and cayenne to the pot. Cook the spices for a minute to create a delightful aroma.
3. Add the chickpeas to the pot and coat in the spices.
4. Pour in the vegetable broth and bring to a boil. Reduce the heat and simmer for 15 mins, allowing the flavours to meld together.
5. To achieve a velvety smooth consistency, blend the soup using a blender and if needed, blend in smaller batches.
6. Return the soup to the pot on low and stir in the lemon zest and juice. Season with salt and pepper, and heat until warm.
7. Serve this Lemony Chickpea Soup hot, drizzle with a little chilli oil and garnish with parsley or coriander - serve with toasted sourdough and enjoy!

🥕 500ml vegetable stock (recommend using !)
🌿 1 tbsp dried tarragon
🥛 250ml vegan cream
🥄 1 tbsp white miso paste (we love using !)
🥬 200g fresh kale
🫛 150g frozen peas

INSTRUCTIONS
1. In a large pot, sauté the shallots, salt and garlic until the shallots are translucent, about 5 mins.

2. Add the cannellini beans, artichokes, mustard, vegetable stock, and tarragon and stir to combine.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
3. Bring the mixture to a boil, then reduce the heat and let simmer for 10-15 mins.

4. Stir in the vegan cream and white miso paste until well combined.

🍝400g bow tie pasta
🥕300ml veg stock
🧂Salt & pepper
For the crunchy topping:
🥖40g golden breadcrumbs
🧀30g Plant Based cheese, grated
🪴2 tbsp fresh parsley, chopped
🫒1 tsp olive oil
INSTRUCTIONS
1. Preheat the oven to 200°C and grease a baking dish with olive oil.
2. In the greased dish, toss the onion, garlic and Italian seasoning with 2 tbsp of oil. Season and place in the oven for 15 mins until the onions soften.
3. Meanwhile, boil the pasta in a pan for 5 mins. Drain and set aside.
4. Once the onions are soft, add the leeks, peppers, chopped tomatoes, balsamic vinegar and smoked paprika to the dish. Stir, then add the pasta and stir to coat. Pour in the stock, ensuring the liquid covers the pasta.
5. Cover the dish with foil and return to the oven for 45 mins.
6. Mix the breadcrumbs, Plant Based cheese and parsley with a spoonful of oil in a bowl.
7. Once the pasta has baked for 45 mins, remove the foil and sprinkle on the breadcrumbs. Bake for 10 mins until the top is golden.
8. Allow to rest for 10 mins before serving!

🫘 1 tin Mr Organic Chickpeas
🍠 500g seasonal veg (sweet potatoes, swede, parsnip)
🧅 1 red onion, sliced
🫒 2 tbsp Mr Organic Extra Virgin Olive Oil
🍋 Zest of 1 lemon
✨ 1 tsp ground cumin
🌶️ 1 tsp paprika
💫 1⁄2 tsp turmeric
🌶️ 1⁄2 tsp cayenne pepper

🥦 Tenderstem broccoli, cut small
🍋 1 sliced lemon

For the zesty coriander drizzle:
🌿 1 handful fresh coriander, stems removed

INSTRUCTIONS
1. Make the Tomato Confit (find the full ingredients and recipe on our website!).
2. For the traybake, preheat the oven to 200°C. In a bowl, toss the chickpeas and veg (apart from the broccoli) with olive oil, lemon zest and spices.
3. Spread on a baking tray. Place the lemon slices on top and roast for 25 mins.
4. Toss the broccoli in the same bowl, place the broccoli stems on top of the tray. Roast for 10 mins until golden.
5. Whilst roasting, prepare the Coriander Drizzle by combining the coriander, lemon juice, olive oil, salt and pepper, and the roasted garlic from the confit in a food
processor.
6. To serve, add the confit tomatoes onto the traybake and drizzle with the coriander sauce!

🫘 1 tin Mr Organic Chickpeas (400g), drained
🧈 2 tbsp unsalted Plant Based butter
🧄 3 cloves garlic, sliced
🥬 100g curly kale, roughly chopped
🌿 2 tbsp fresh tarragon leaves, chopped
🥕 200ml vegetable broth
🍋 1 tbsp Mr Organic Lemon Juice
🥥 2 tbsp coconut yoghurt
🧂 Salt and pepper, to taste
🌶️ Chilli flakes for garnish (optional)

INSTRUCTIONS
1. Prepare the chickpea rice according to packaging instructions, then set aside.

2. In a large skillet over medium heat, melt the vegan better and sauté the sliced garlic
for 1-2 mins or until fragrant. Add the drained chickpeas to the pan with the garlic-infused butter and stir gently, allowing the chickpeas to absorb the flavours for 4-5 mins.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
3. Add the chopped kale to the pan, allowing 3 mins for the leaves to wilt before adding the fresh tarragon.

4. Add the cooked chickpea rice to the skillet and pour in the vegetable broth, whilst stirring. Heat through for about 3 mins whilst stirring.

5. Stir through the lemon juice, then remove from the heat and stir in the coconut yoghurt.

INSTRUCTIONS
1. In a large pan, heat the olive oil on medium heat. Add the onion and sauté until softened. Add the carrot and leeks, stir regularly until all ingredients have softened and lightly caramelised. Sprinkle a little salt into the pan to speed things up.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
2. Add the garlic and once fragrant, stir in the dried thyme. Toss to coat the veggies in the herbs and after heating through for a minute, pour in the veg stock.

3. Bring to a simmer, then add cover and reduce the heat. Let everything simmer for 5-8 mins for the flavours to meld together.

4. Add in the cannellini beans, and once heated through, use a stick blender to blend roughly 1⁄4 of the soup to give it a creamy texture. Stir well, and simmer on low heat for 10 mins, then season to taste with salt and pepper.

5. To serve, garnish the soup with fresh thyme and enjoy alongside a slice of freshly toasted bread!

INGREDIENTS (serves 3-4)
🍶 2 tbsp Mr Organic Extra Virgin Olive Oil
🧅 1 medium onion, finely diced
🧄 3 cloves garlic, crushed
🍄 400g chestnut mushrooms, sliced
🫙 1 tbsp tamari soya sauce
🌿 1 tsp dried thyme
🌶️ 1 tsp paprika
🫘 1 tin Mr Organic Lentils, drained & rinsed
🥕 200ml vegetable broth
🍃 1 bay leaf (optional)
🥛 150ml Plant Based cream (optional)
🧂 Salt & pepper

🌱 Fresh spinach, wilted

To serve:

INSTRUCTIONS
1. Cook the pasta, potatoes or rice according to instructions.

2. In a large pan, heat the olive oil and sauté the diced onions until soft. Add the garlic and mushrooms, and cook for 10 mins, stirring regularly until the mushrooms soften. Drizzle in the tamari and cook for 2 mins to let the liquid evaporate.

3. Stir in dried thyme and paprika, then add the drained lentils, stock and bay leaf. Simmer for 5 mins to let the flavours come together.

4. Pour in the Plant Based cream and simmer on low heat. If needed, thicken with a cornstarch slurry, and season to taste with salt and pepper.

Bursting with flavour and vibrant in colour, these Glazed Rainbow Carrots are bathed in a sweet glaze combining our Organic Agave Syrup, tangy Dijon mustard and fragrant thyme and will look simply stunning on your festive table spread!🎄
INGREDIENTS
🥕 500g rainbow carrots, trimmed and washed
🍯 2 tbsp Mr Organic Agave Syrup
🍶 2 tbsp Mr Organic Extra Virgin Olive Oil
💫 2 tbsp Dijon mustard
🍎 1 tbsp Mr Organic Apple Cider Vinegar
🌱 A pinch of dried thyme
🧂 Salt and pepper to taste
🌿 Fresh parsley, chopped (for garnish)
INSTRUCTIONS
1. Preheat the oven to 200°C. Line a baking tray with parchment paper.
2. If the carrots are large, cut them lengthwise for even cooking. Place the carrots on the prepared baking tray.
3. In a small saucepan, combine agave syrup, olive oil, mustard, vinegar, dried thyme, salt and pepper. Heat the mixture over low-medium heat, stirring gently until well combined and slightly reduced. Set aside.
4. Drizzle the glaze over the carrots, ensuring they are evenly coated. Use a brush to coat them thoroughly.
5. Place the tray in the preheated oven and roast the carrots for about 20-25 mins until tender and caramelised, turning halfway through for even cooking.
6. Once done, transfer the glazed carrots to a serving dish and garnish with freshly chopped parsley for an extra touch of flavour and vibrancy!
