It's the 4th of July, so whether you want to celebrate our general election today, American independence or just wanna help out freeing our rivers from an invasive species, do it with a boil!

It is very easy to get going in the morning, even after all the late nights we do as chefs, as long as we're getting going with produce this good.

What is a jambalaya?

Lots of people ask me this, and some have tried to tell me it's like a paella or a jollof, but a jambalaya is a jambalaya. Cooking meat, vegetables and broth with rice is no unique thing, but just as biriyani developed in India completely differently to risotto in Italy, jambalaya is unique to Louisiana.

The essentials are smoky andouille sausage, a flavourful stock, trinity (onions, celery and green bell pepper) and a star ingredient that becomes the focal point. Creole jambalaya uses tomato, Cajun does not. The rice is usually long grain, but Louisiana long grain is quite different to the long grain commonly available in the UK. The dish should be rich with smoky, meaty flavours. It will be well seasoned but not spicy.

For our current jambalaya, we use braised rabbit legs and spring vegetables. Sweet peas and fresh asparagus balance against the light, gamey flavour of rabbit.
