Sukiyaki might sound like a Japanese dish, and it is, but it's been made better in Thailand, this version is very Thai. Originally Sukiyaki is a Japanese hot pot, Thai people took the inspiration and started making their own Thai hot pot served with a spicy, flavourful red sauce that's more suited to the Thai palate. They still call this hot pot sukiyaki, or more commonly just "suki" for short. They took it further by then making Suki Nam which is a one bowl noodle soup with the suki sauce. Then they also have suki heng which is a stir fried noodle using the suki sauce.
Here for you today we're continuing on from last weeks video for the suki sauce and making the suki nam.

1 Litre of water
2 eggs
Bunch of Chinese leaf
Bunch of Morning glory/ water spinach
Bunch of Chinese celery
40g Glass noodles soaked for 15 minutes in room temperature water
75g of seafood or protein of your choice per bowl
1 Tbsp light soy sauce
1 tsp of seasoning powder
A bowl of the sauce from last weeks video along with fresh chilli and garlic to add.

2x tsp of red bean curd
1x tsp of red bean curd juice
3x bulbs of pickled garlic along with a Tbsp of the water
3x Tbsp of light soy sauce (we added another two later, but add according to your taste)
2x Tbsp of sugar
10 cloves of garlic
10 Thai Birds eye chilli
4x sp**gs of coriander root
3x Tbsp of white vinegar
3x Tbsp of chilli sauce
Small bowl of water
Dress with coriander
1x Tbsp of sesame oil
2x Tbsp of toasted and crushed sesame seeds
fresh chilli and garlic to add to the sauce at the table

1 Heaped Tbsp of red curry paste
1 Large sweet red chilli ( sliced)
4 Tbsp of coconut milk
1 Tbsp of sugar
150g-200g mixed seafood or protein of your choice
25g Kaffir lime leaves (sliced)
1.5 Tbsp fish sauce
4 Sweet basil leaves
2-3 Bai yor leaves

Traditional Chinese Herbal Chicken Soup Recipe
Todays recipe is a gorgeous herbal soup, packed full of flavour and great for your health too!

Here's the recipe:
2.5kg Fresh chicken (preferably on the bone)
2 litres of water
1 tsp black pepper
4 Tbsp of light soy sauce
A couple of lengths of chopped celery
Quarter Tbsp of salt
5g rock sugar
8-10 Sh*take mushrooms (cleaned and soaked in water for a couple of hours)
Decrate with chinese celery (optional)
1 Pack of Chinese herbs ( we wont use all of it)
A few pieces of Yu zhu
A Tbsp of Gei ji
A couple of large pieces of Shan yao
A couple of lengths of Dang shen
1.5 Tbsp of American Ginseng
8-10 Hong zao

This dessert is a favourite amongst South East Asian countries with multiiple versions with some having extra ingredients such as pandan leaf or patongo. Our version today is the basic Thai version that you can prepare with pandan leaf although we couldn't get any in time for the video.
Here's the recipe:

300g Mung beans
1.5l Water
400g Sugar
4 Tbsp corn flour and water mixture

Half a pomelo
6 birds eye chilli
4/5 dry roasted birds eye chilli
2x Tbsp fish sauce
1 banana shallot
4/5 cloves of garlic
Coriander to decorate
Handful of prawns
Pinch of sugar ( depends on how sweet and sour your pomelo is)
30g cashew nuts roasted
Couple of Tbsp of grated coconut
3 wedges of lime ( depends on how sweet and sour your pomelo is)

This curry is a Mon dish that is served with white rice noodles, it's readily available in Mon areas in Ratchaburi like Ban Pong and Photharam, with stalls selling this by the boat load. Khanom jeen namya is the most popular and the most readily available. It embodies everything great about Thai flavours, salty umami flavour with a rich savoury texture. This is a slightly more complicated recipe with quite a few ingredients, the actual process is simple enough but has various stages. This is the first video filmed in the family home of Chef Tou in Ban Pong, Ratchaburi. Listen out for all the sounds of the wild animals in the background.
Here's the recipe:
🟢For the curry:
1 large fish, preferably one that is easy to debone (we used mud fish)
1l water
Try and use a fresh coconut if you can, otherwise use about 400g of desiccated coconut
200g of krachai
5/6 Tbsp of fish sauce
100g red shallots
20 pieces of dried chillis
100g garlic
20g of galangal
4 lengths of lemongrass
20g saw tooth coriander ( if you can't get it use regular coriander)
20g bai meang luck (you can use normal Italian basil instead)
Couple of packs of white rice noodles (khanom jeen noodles)

During our recent trip to Thailand we journeyed to the north of Thailand looking for the best Khao Soi we could find.
We think we found it in a town called Nan in a restaurant called Khao Soi Tonnam!

This sauce is great and embodies everything great about Thai flavours, salty umami flavour, sour and sweet and goes so well with many snacks and starters ranging from spring rolls to prawn cakes and even Hoi Jor! This is any easy recipe with only a few ingredients and should take you lkess than 15 minutes.
This is the standard recipe so feel free to put your own stamp on it.

100ml Water

Hi everyone in today's video Chef Tou will be showing a little known dish that is more of a home cooking Thai dish, chicken boiled in soy sauce or g*i tom see eew. Fortunately is a one pot dish so this is great for feeding the whole family with a minimum of fuss, just add rice. This is a really great dish, this was also the first time i tried this. Here's the recipe: 🟢For the chicken one pot:
1 kg fresh chicken ( thighs are better but you can add a few drumsticks like we did)
2 Heaped Tbsp Coconut sugar (you can use palm sugar instead) 1 Large piece of ginger cut into large pieces
10 Cloves of garlic
1 tsp crushed black pepper
5/6 sp**gs of coriander root
Enough water to cover the chicken
1 Tbsp dark soy sauce
2 Tbsp sweet dark soy sauce
4 Tbsp light soy sauce
Decorate with coriander, sweet chilli and spring onion
🟢 For the side sauce:
1 Tbsp white sugar
12 Thai birds eye chilli
4/5 sp**gs of coriander root
10 Cloves of garlic
3 Tbsp fish sauce ( we added an extra Tbsp after tasting)
1 Tbsp white vinegar
2 Limes ( although we added an extra lime after tasting)
Decorate with coriander
