How Crispy is Too Crispy?
You tell me, I love a Crispy bit of bacon but I know some people love it to be lifeless and limp. I think that's the same sort of people who put the milk into a cup of tea before the hot water but there you go π€·ββοΈ

I'm not eating a huge amount of carbs but I can't resist the odd, super crisp roast potatoes...how good does all of this look?
As always, I try and shop local. All of my meat comes from my local butcher who is tagged in this (no sponser) and he does National delivery so definitely worth a look in!

New Year...New Steak...that works right?
I'm not to usually buy steaks from the Supermarket, its usually the butchers or nothing for me but we had to give this Wagyu Steak a go, this a ranch cut, one of my favourites to have on the Barby. Sadly not BBQ tonight but a scorching hot pan will do!
How do you like your chicken skin? Fried, Grilled, crispy or soft?

One thing you have to get used to in the UK is if you want to grill, is get used to doing it in poor weather lol.
What are you cooking this evening?
Chicken...you can do a 1000 different recipes with it and it always turns out nice as long as you follow a couple of simple rules.
Breast, dont cook it for too long, high heat and quick is the best, just make sure its cooked through.
Thighs, cook it for longer and a medium heat, get that fat rendered out or crisped up, either way is awesome!

Smoked beef roasting joint....what are you hoping to cook this week?
Quite often people leave the smoker and bbq for the weekend due to time constraints but this joint only took 2 hours to cook! Prep it the night before, wrap it up and get it on the smoker when you get in.
If you're lucky enough to get home at 5ish you could easily get one of these on for a late mea. If you don't fancy that, a burger only takes about 15 minutes to cook!
Do you bbq/smoke after work or is it purely a weekend thing?

The weather has been a bit rubbish this week, not terrible but no rain and very little sun...just grey and miserable! I figured the perfect thing to get on the grill would be some burgers!

I love all the seasons and Winter has its reasons to make me smile but I struggle to find a better time of year than when you can get outside for the first time in Spring....what a feeling!!
Get the fire going, pour a whiskey and watch the sunset....it really is heaven!!

Didnt fancy the Eggs and Browns for brekkie this morning so "settled" for a BLT...hands down one of my favourite sandwiches!

A bit of a throw back while todays meal is marinating....
Take a pork leg, flip it over, use your knife to open it up a little, add a dry rub, and put it on to roast using indirect heat for an hour and half.
This was the first time I've really roasted anything in the barby but I think it turned out pretty well...there isn't much left over so it had to be good lol.
If you fancy doing it I would highly recommend picking up a wireless meat thermometer as that makes life A LOT easier lol.

I think we have Pork Burgers, Lamb Burgers and Beef Burgers, probably for a triple stack and some Chicken thighs on the side becayse...well why not!
Using a super high end, reclaimed (taken from the local tip/dump) BBQ with no lid.
See, you dont have to be fancy to get it done. Some people think you need to spend Β£1000s but in reality a pit, some charcoal and something to hold the food off of the coals will work!!

Meat is getting super expensive in the UK but thankfully pork is still fairly manageable in terms of cost.

When the weather is warm we all love to cook outside right? I doesnt always have to be smoked meats and burgers...although I do love some smoked meat and a cheeky triple stack!
One thing Ive started doing is getting wok out on the Barby and cooking a stirfry. This is obviously a lot easier if you have a side burner but is still doable on a normal gril ππΌ

Steak, Potatoes, Peas and Mushrooms...is there a better combination?
This is genuinely one of my favourites!! What are one of your favs to cook on the grill?
I've started upping the mushrooms & peas and cutting down on the carbs which I think changes the whole feel of the meal. Sort of like a cooked salad? I might just be talking rubbish though π
As always the steaks from March Quality Meats were awesome. Remember folks, always support your local butchers where you can.
