Sushi was originally invented as a means of preservation, when fermented rice was used to store fish for anything up to a year. This was known as narezushi, and in fact the rice was thrown away and only the fish consumed.
Temaki sushi (手巻き寿司) known as temakizushi in Japanese, is a type of rolled sushi (makizushi) that is shaped by hand rather than using a bamboo sushi mat.
Tsukiji Tamazushi was the first restaurant in the world to invent this type of sushi. The "Suehiro Temaki" was invented more than 50 years ago, in 1971.

Temakizushi is a very literal Japanese word. Te is hand and maki is roll so, therefore, “hand roll sushi” is the meaning. It is a great party food because a host can prepare the sushi rice and all the fillings beforehand and everyone can enjoy to make their own hand roll sushi with the fillings they like.

What does nigiri mean in sushi?
The word nigiri (ni-giri) in Japanese stands for “two fingers.” This is the typical portion of rice that sushi artists use in order to do the act of “nigiru,” which is to grasp, or seize, the rice that will bed a delicious slice of fresh fish. All words combined make the final name of “nigirizushi” 握り寿司.

Sushi rice was once considered trash.
Narezushi, the original Japanese sushi, consisted of fermented rice and aged fish. The long fermentation time gave it a distinct flavor and prevented the growth of bacteria and microorganisms.
After the fermentation period has passed, the fish is eaten… and the rice is thrown away. Latter variants, including vinegared rice, were introduced and the Japanese soon started eating the rice along with the fish.

Why is sushi considered to be healthy?
It contains high-quality protein and omega-3 fatty acids from fish, plus a great combination of vitamins and minerals.
White rice provides carbs for energy, and won't raise your blood sugar too high because it's combined with fat and protein.

Originally sushi was developed in Southeast Asia between the 5th and 3rd centuries BC as a way of preserving raw fish in fermented rice. Gutted and salted fish wrapped in fermented rice was stored for months without spoiling. The practice spread to south China before being introduced to Japan around the 8th century.
