Our pistachio vegan cheese is ready🥰
January always feels like one of the slowest months, and it usually takes us a few weeks to get back into a good routine... No sunshine just gets us down in the dumps!
We thought you guys might be feeling the same so this month's cheese has been designed to give you an extra nutritional boost🌿
We have lacto-fermented pistachios and cashews with wheatgrass and spirulina to create this Superfood green cheese, then potted it with a swirl of our best-selling orange and sumac infused cranberries for an extra depth of flavour. Spirulina and Wheatgrass are both super high in essential vitamins and minerals, and the probiotic in our living cheese increases the bioavailability of both.

Let's have a conversation about lacto fermentation!🌿🦠
Lactobacilli is the probiotic "good" bacteria that can be found on the surface of raw vegetables (and it just so happens this is the same probiotic that is present in our gut!) Lactobacillus can help the body break down food, absorb nutrients, and fight off "bad" organisms that might cause diseases. When we ferment our vegetables, the lactobacilli multiplies and breaks down the sugars present, creating lactic acid. This gives our ferments their special sour taste, and can help to maximize our bodies ability to absorb nutrients, meaning you're getting as much goodness as possible from our ferments!
This month's ferments are made using turnip, beetroot and garlic along with our special blend of sprouted seeds. Find them as part of our Veganuary sharing platters🌿

Happy Sunday and happy Veganuary!
We'd like to introduce our newest vegan cheese- we have fermented pistachios and cashews with our own Living Kitchen probiotic, before adding spirulina and some other special ingredients for an extra nutritional boost🌿
This cheese will be potted with a swirl of our sumac and orange infused cranberries and is available as part of our Veganuary sharing platters. Pairs amazingly well with our sourdough flatbreads and a selection of lacto fermented pickles🥰

Yesterday was B U S Y😵‍💫
After a day of prepping and planning (and dealing with a sourdough starter explosion) we raided our fridge for a wholesome, vegan dish made entirely from leftovers:
🌿Lentil and kidney bean Dahl
🌿 Courgette and sauerkraut fritters (we used our Superfood Sauerkraut combined with a grated courgette and our own Living Kitchen "egg" then gently fried)
🌿 Fermented tomato chutney and red Superfood Sauerkraut salad
All ferments are tucked away all cosy in our fermenting cupboard for your Veganuary sharing platters- keep your eyes peeled for updates!

Starting to feel like you'll never financially recover from Christmas?🎄💰
Our January Date night boxes are perfect for a night in with some extra special vegan treats- what a perfect way to celebrate Veganuary!
Our boxes this month contain a selection of Lebanese inspired dishes with full reheating instructions- all you need is an oven!
Boxes contain:
🌿 Living Kitchen original probiotic hummus- We use sprouted chickpeas and beans and ferment with Living Kitchen probiotic to create this extra special probiotic hummus
🌿2 Living Kitchen sourdough flatbreads- using our own chickpea and rice flour sourdough starter
🌿Our Lebanese inspired lacto fermented pink turnip pickle- flavoured with beetroot, garlic and our warming Sprouted seed mix for an extra probiotic boost
🌿 Living Kitchen lacto fermented tomato chutney- we ferment tomatoes in fenugreek and cumin water before cooking to give this chutney and extra depth of flavour
🌿 Pistachio and Cashew cultured vegan cheese- this bright green cheese is created by fermenting pistachios and cashews with our Living Kitchen probiotic, then swirled with sumac and cranberry (a new take on our Christmas favourite)
🌿 Living Kitchen sprouted falafel mix- Falafels made with sprouted chickpeas, beetroot and mint for an extra flavourful nutritional boost (full instructions on how to reheat your falafels included)
🌿 Living Kitchen seitan shawarma- Our own recipe seitan, infused with shawarma spices and herbs then gently grilled for a smoky flavour (full reheating instructions included)

So we weren't going to share this until tomorrow but it felt like the right time to showcase some vegan comfort food for you all🥰🌿
Our Christmas cheese hampers had a selection of 6 vegan cheeses, so if you're finding your fridge has been taken over by The Living Kitchen, why not use some of them in your cooking?
We made a super smoky and rich vegan cauliflower and broccoli cheese and topped it with some of our own lentil and TVP "haggis" before baking for an extra crispy finish😍
Recipe below:
🌿 Chop half a cauliflower and half a broccoli into florets and boil in salted water for 4 minutes. Drain and set aside.
🌿Melt 50g of vegan butter in a non-stick pan, then add 4 tablespoons of plain flour and stir to combine.
🌿 Cook the flour in the butter for around 1 minute, then slowly add 400ml of plant based milk, stirring to combine and get rid of any lumps.
🌿Add in a pot of our vegan beechwood smoked cashew cheese, a good pinch of salt and a tablespoon of nutritional yeast flakes.
🌿Let the sauce cook down for a few minutes until it thickens, then add your cauliflower and broccoli florets and transfer into a baking dish
🌿Top with breadcrumbs (or in our case, vegan lentil and TVP haggis) and bake at 220 for 25-30 minutes
Recipe for our vegan haggis will be coming in the next few days so keep your eyes peeled 👀

Happy NYE!🎉
This time last year I was just beginning to plan The Living Kitchen- I actually thought of the name in the middle of the night and had to get out of bed to make a note of it!
I've learned so much this year and I am so thankful that even after two months I have such an amazing network of customers that I can share my ideas and creations with. You're all wonderful and I'm excited to share with you our plans for 2022! 🥰🌿

Ever had a vegan poached egg? We've taken a little break from fermenting this week to do some more experimenting in our kitchen and we're having a blast!🌿
These vegan "eggs" are made using equal parts chickpea flour, tapioca starch, firm tofu and water whizzed up with turmeric, black salt and white miso paste.
We then crumbled more tofu into the mix and gently stirred it through.
Add to an egg poacher and steam for 10-15 minutes - we served these as part of a vegan breakfast and finished with sriracha sauce🌶️
We've already started evolving this recipe and you may find this featured in one of our future ferment boxes! Eyes peeled for updates!👀

Hello! So we're in that mysterious window of time between Christmas and New Year, and we just wanted to take this chance to say a massive thank you to all of our lovely customers for their orders over the festive season! We're currently working on our January menu, and will be releasing our selection next week🌿
In the meantime, we were feeling like we needed a bit of a reset after a few days of indulgence so made a green pea and spinach leftover soup:
🌿Sautée green peas, onion and cabbage before topping up with water and bringing to the boil
🌿We then added the last of our Christmas roasted sprouts and let the whole thing simmer for 7-8 minutes (add whatever leftover veg you have)
🌿Remove from heat and add an entire bag of spinach and a big spoonful of our garlic and herb fermented cheese (we also added a teaspoon of moringa powder for an extra green boost)
🌿Stir through until the spinach wilts, then blitz it all up and season with salt and pepper, finish with sriracha and sesame seeds!!
Keep your eyes peeled for next month's ferment boxes!

Phew! The past two weeks have been incredibly busy for us while we've been working away at getting your Christmas hampers ready, but we've finally made it!🎄
Taking this as an opportunity to introduce our new cheese and hummus pots:
🌿Spiced Apricot and Orange cashew cheese
🌿Beechwood Smoked Sunflower Seed cashew cheese
🌿Szechuan and Black Sesame probiotic hummus
The boxes this year also include a selection of pickles, chutneys, crackers and some extra fancy dosa inspired mini flatbreads (perfect for dipping in hummus!)
If you missed out on a Christmas box don't panic, we have some extra special treats brewing in our fermenting cupboard for our January boxes! These will be released the first week of January, but for now we're taking a much needed Christmas break!

THIS is why we call ourselves The Living Kitchen!🌿
The favourite part of my day this week has been popping open this jar of fermenting tomatoes and seeing just how lively they are! We decided to create a brine using the fenugreek and cumin water from our sprouts (that you can find in our Superfood Sauerkrauts,) combined with a blend of black salt, pink salt and chillies. These tomatoes have a few days of fermenting left, then they'll be whizzed up with some other ingredients to create our festive spicy tomato chutney🍅

Our superfood sauerkrauts are ready!🌿
We have been carefully fermenting cabbage, methi sprouts and cumin sprouts with a blend of apples, pears and ginger for the past 2 weeks and they have finally reached that perfect flavour and crispness. We are OBSESSED with the colours and flavours in these little pots of lushness... They look AMAZING as part of our Christmas vegan cheese boards!

Ever had probiotic hummus?
We've been experimenting with fermenting a few different grains and beans along with chickpeas and we've finally nailed our fermented hummus! Super tangy and creamy, and full of good stuff to give your body an extra boost. Here's a batch of wild garlic fermented hummus we made back when the ramsons had gone to seed. You will get the chance to try our original probiotic hummus as part of our Christmas hampers, along with a newly developed flavour that we'll be releasing later today!🌿

What are your thoughts on smoked cheese?
We've been experimenting with cold smoking a batch of raw cashews prior to fermentation using a blend of beechwood, coconut husk and sumac. The smoky flavour carries amazingly well through the fermentation process, and because of the controlled temperatures we maintain a healthy environment for our probiotics to do their thing!
These smoky pots of lushness are available as part of our Christmas cheese boards - order soon if you'd like to get your hands on a box as we've almost sold out!🌿🥰🌲

A £20 deposit is required when ordering, and boxes will be ready for collection on 20/12/2021 from either SR1 or NE6. Special delivery to other parts of the UK can be arranged at an extra cost.
