Last year our amazing Domestics released a charity single for SHINE!

Two of our talented domestics at Saint Nicholas hospital released a single for the trust charitable funds which was inspired by the experience of working within the NHS during the COVID pandemic. They have performed the song live as well as teaching themselves new skills like producing a music video to go with the single. They are looking to continue to raise funds as well as release new singles in the future.

We are so proud of they way our staff have pulled together to support and encourage their colleagues this week. Some of the great things we've heard about include:

❤️ Managers adjusting shifts and schedules so staff could get home in enough time to avoid the disruption

❤️ Staff speaking to and messaging colleagues to support each other and spread positivity

🍛 South Asian Heritage Month Friday Menu 🍛

For Friday we’ve brought out a classic, mild and slightly sweet, a chicken tikka masala is a great curry for any beginner! Though the tikka masala is believed to be invented in Britain, it was still a creation of our British South Asian communities! 🍽

Another country celebrated as part of SAHM is the Kingdom of Bhutan! This is a small country in the Himalaya Mountains with a Buddhist state religion. Bhutanese people use lots of chilli and cheese in their food. 🧀

Ema datshi is the national dish of Bhutan, which is a spicy stew with green chilli peppers and cheese! 🤤

🍛 South Asian Heritage Month Thursday Menu 🍛

This Thursday, enjoy this medium hot Sri Lankan curry made with tomatoes, coconut milk, garlic, ginger, cinnamon, lemongrass, curry leaves and green chilli amongst others. This one has a little bit of a kick to it, so if you like a bit of heat this might be to your taste! 🌶🌶

📍 Sri Lanka is known as the Pearl of the Indian Ocean and was the first country in the world to elect a female prime minister in 1960! They are also big tea drinkers, and Sri Lanka is known for producing some of the world’s finest tea ☕

📍 Food Fact 📍 Sri Lanka is very famous for its cinnamon, and it’s ‘True Cinnamon’ tree!

🍛 South Asian Heritage Month Wednesday Menu 🍛

This South Asian Vegetable Curry is mild and rich, filled with butternut squash, aubergine and spinach. It uses lemon grass, cardamom, tamarind paste and turmeric amongst other spices to give it a beautiful aromatic flavour 🍝

📌 One of the countries we’re celebrating as part of SAHM is Pakistan! Because Pakistan is an Islamic country, they only eat halal foods and don’t eat pork. They make a lot of spicy and aromatic dishes, using a mix of spices commonly referred to as “karri,” 🧂

The world famous pink Himalayan salt is mined in Pakistan!

🍛 South Asian Heritage Month Tuesday Menu 🍛

Rogan Josh is an aromatic curried meat dish that has a little bit of heat and a tomato flavour. The lamb is spiced with cumin, paprika, fenugreek and chilli powder amongst others. 🌶

India produces more than 70% of the spices used around the world. They also produce the most varieties of the spice turmeric, a rich yellow spice which is thought to have great anti-inflammatory health benefits. ✅

🍛 South Asian Heritage Month Monday Menu 🍛

The first dish on this week’s South Asian menu is Red Lentil and Chickpea Dal. This is a lovely, mild vegetable curry made with red lentils, chickpeas, onions, butternut squash, cauliflower and tomato in a smooth coconut milk and tomato sauce filled with spices like coriander, cumin, turmeric, garam masala and more! 🥣

Dal’s are a very common dish served in South Asian countries, like in Nepal which lies between China and India. Lentils are an important component of many Nepalese dishes, providing protein and flavour. ✨

In Nepal they often eat their meals with their hands- though it’s considered impolite to use your left hand while eating! 👋

I’ve been here for just under a year myself and you’ll find that across the board people are up for delivering this and the commitment comes from the top. You’re not having to bang doors down to get this on the agenda.

That commitment can be seen in what has already been achieved, we already generate more electricity from solar than any other mental health trust in England. But we have a long road ahead of us and there’s lots to do.
