Mother’s Day is just around the corner and so why not treat your mum to an afternoon tea on Sunday 10th March!

My mum has been an integral part of my chef career - giving me lots of encouragement, helping me try out my business, tasting lots of things and listening to all my random thoughts!

While at the Ritz I organised a surprise birthday meal for her. Unfortunately as staff I wasn’t allowed to join the meal but I was allowed to go into the restaurant with a big chefs hat on and present her with a large birthday cake!

My top tip this Valentine’s is…SAVE ROOM FOR DESSERT!

My sharing dessert platter is currently on the menu …salted caramel cream filled Choux buns topped with a crunchy red craquelin, fruit pops, large toasted fluffy marshmallows, brownie and sticky toffee bites…all ready to be dipped into creme anglaise, salted caramel and chocolate sauce.

Super shiny dark chocolate mirror glaze enrobes this little chocolate, vanilla and crunchy praline mousse.

🤍 We had a fabulous photo shoot at The Tempus recently to promote…weddings 💒 at the Tempus! I was asked to create a Lambeth style buttercream heart shaped cake for the shoot. Here it is! 🤍

Rose and pistachio Battenberg present 🎁 is the third cake on my festive afternoon tea

I use marzipan from Lubeck in this Battenburg. Lubeck in north Germany is renowned for its production of marzipan with a high almond and low sugar content. Resulting in a soft marzipan which has deliciously delicate flavour.

Cheap marzipan is minimal in almonds, loaded with icing sugar and finished with lots of flavouring!

I would recommend if you want to get your hands on some of this delicious marzipan. Perfect for covering Christmas cakes too!

A white mint chocolate glazed wreath is one of the patisserie selection on my Festive Afternoon Tea

Inspired by mint candy canes and the white mint chocolate in the Bendicks chocolate mint selection…it was always my favourite growing up! Although sadly they don’t make this one anymore!

Sweet buttery pastry, luxury mincemeat and an almond frangipan topping makes these little pies soft and delicious! Add a blob of clotted cream to be taken to pie heaven!

Find these mince pies throughout December…the perfect little accompaniment for with a cocktail in the gorgeous bar!

Gianduja Chocolate Mousse with Salted Caramel and Caramelised Hazelnuts currently on dessert menu!

I first tried Gianduja chocolate whilst working at the Ritz and it is by far the best chocolate to use when you want a nutty chocolate flavour. It is from Italy and is a blend of chocolate and hazelnut paste…to be classed as Gianduja it must comprise of at least 30% hazelnut paste.

Which means Nutella is certainly not a Gianduja equivalent or replacement!

It’s toffee apple season! I love toffee apples and so this was one inspiration behind my toffee apple mousse cake which features on my autumn afternoon tea menu at The Tempus Charlton Hall . Plus there is an abundance of apple trees on the Charlton Hall Estate so plenty of apples to use!

Perky pink macaron to brighten your day!

Sweet and tangy...this macaron is sandwiched with a raspberry swiss buttercream and hiding in the middle...a lime pate de fruit.

Yesterday this was described to me as a "very posh profitorole"...and I couldn't agree more!

Here is its full description!

Choux topped with craquelin and filled with a chocolate cremeux and passionfruit curd. Topped with a dark chocolate autumn leaf disc and a sprinkling of cocoa.

Introducing…Afternoon Tea at The Tempus!

I can’t believe the Afternoon Tea is now up and running…it seems a while since I first started to create the Autumn menu!

This is the FIRST TIME Afternoon Tea has been served so myself and the team also had decisions to make about which stands to purchase and the types of crockery and tea pots to choose.

We decided pink and gold matched the beautiful aesthetics of The Tempus restaurant…to see it all with your own eyes (and eat some delicious cakes)…make a booking!

Afternoon Tea is available to book on Thursday, Friday and Saturday from 2.30pm - 4.45pm.

Hello! Catherine’s Cake House NEWS! Over the last few weeks I have been working at a gorgeous brand new hotel in Northumberland developing their dessert menu (all desserts available now!) and afternoon tea (coming soon!). It has been great fun and I’ll be sharing more over the next few weeks!
