What is special about our whisky is that at the barrelling and bottle stages, we never mix different casks together, so each distillation you try from our distillery will be unique and could be slightly different from the next. 🥃
Our spirit develops its colour and flavour from the different barrel types we source and the sweet spirit from our ex-Cognac still. We never add any flavourings or colourings, and we do not chill filter either. We think the pure expression of the cask on the spirit is the most beautiful thing about whisky and we want to celebrate that.
In 2022, all three of our whisky expressions were awarded in the Great Taste Awards.⭐

Our barley is grown and cared for by a local Dartmoor farmer, Tim Cox. His farming fields have belonged to his family for decades and he knows his stretch of land like the back of his hand, so we're incredibly fortunate to work with someone of his level of expertise 🚜 🌾
After this, our beer wash is made in Princetown with Dartmoor Brewery . The collected malted barley is brewed for a few hours and slowly turns into 'beer-wash' - this is the heady liquid that we use in the distillery to make our whisky.
Before we cask our smooth Dartmoor spirit, it undergoes three distillations. A spirit must be in the cask for three years and a day before it can be legally called whisky, the very nature of whisky is slow and patience really is a virtue as a whisky distiller.

Fine whisky requires a fine copper still, and size and shape is important. If the still is too large, the spirit will have less contact with the copper which purifies it. Shape is also essential to encourage vapour ‘reflux’ and a steady condensing of the spirit vapours.🥃
Our still is 1400 litres to receive a 1200 litre charge of beer wash, and the bulbous head with swan neck maximises reflux. Our Master Distiller believes that this is the reason for our very smooth and sweet new make spirit. ✨
A central copper ‘wash warmer’ is also incorporated, functioning to pre-warm the wash for optimum efficiency and double the period of time the spirit is in contact with the copper. Our condenser operates at a rate of 50 litres per hour to ensure a gradual condensing of the spirit vapours.🥃✨

Our primary distillation takes the beer wash from around 9% to 25% ABV. After three distillations, the sweet and smooth spirit, named the ‘low wines’, are returned to the still to be distilled again to produce the finished ‘water of life’ at around 70% ABV.
Our spirit is then transferred into their chosen barrels for the magical maturation process to begin...
Nosing whisky is an important part of whisky tasting as the characteristics of the spirit will reveal themselves first on the nose before being confirmed by the palate. With this in mind, we have put together a guide on how to nose whisky like a professional👃 🥃
First of all, you're going to want to find yourself a glass that is thinner at the bottom to help funnel every scent towards your nose. We recommend a Glencairn glass, as it is the perfect shape for nosing whisky.
Once you've poured the whisky into your chosen glass, be sure to swirl it around. This will release the aromas of the spirit and enable you to pick out the different notes of the expression.
A top tip from the experts is to keep your mouth open slightly when smelling the whisky. This effectively stops the alcohol in the whisky from burning the inside of your nose which would disable you from smelling each unique note. 👄
From the first initial whiff, you should be able to notice any smokiness or spices right away. These smells are quite hard-hitting and difficult to ignore, however, you won't notice any smokiness with our expressions.
Seeking those sweeter, fruit and grainy notes is a little trickier. We recommend holding the rim of the glass against your bottom lip and keeping the glass straight. This creates a channel that is directed straight to your nose to help you detect those fruitier notes. 🍇 🍑
To identify any vanilla or maple notes, you'll want to tip the glass away from you and dip your nose in. These sweeter notes could be an indication that the whisky had been aged in a bourbon cask.
Finally, to narrow down the grain used to make the whisky, you can place your nose to the tip of the glass and sniff. A barley, wheat or a bread-like aroma will help you to pinpoint this. 🌾
