Surely one of the prettiest plates on our menu? Our youngest chef, Joe, had the idea for this Aperol cured trout dish which he developed with the rest of the kitchen team. The fish itself is complimented by the Aperol and grapefruit garnish, giving it a citrus tang alongside the earthy beetroot and is completed by the light anise flavour from the fennel. It all comes together absolutely beautifully and has been a big hit in the dining room!

A little something for our diners with a sweet tooth, Chocolate Bonet. This Piedmontese dessert marries dark chocolate, rum, caramel and amaretti biscuits. The mixture is gently poached in a bain-marie, turned out once cooled and laced with caramel. Rich rather than heavy and utterly delicious.

And that’s a wrap for Christmas 2023 at Nuovo. We’re all taking some well-earned rest and will be back on December 28th. Merry Christmas one and all!

One of our favourite of our new cocktails, Rigoletto. Made with Blanco tequila, housemade carrot syrup, pine liqueur, lemon juice and smoked salt. Light, refreshing and aromatic thanks to the pine. Delicious!

Salmon, apple gel, baby beets and squid ink tuille. Fish of the day.

Another new dish from our team, but this time it’s a dessert. Sweet arancini with a hint of cinnamon, served hot. When we tasted them we couldn’t agree whether they were better with a rich chocolate ganache or a seasonal apple compote, so we offer both! Which would you choose?

Our youngest chef, Joe, just 18, has really taken to creating new and delicious plates that fit perfectly on the Nuovo menu. This gnocchi dish has been very well received in the dining room. Potato pasta dumplings in a smoked onion jus with artichokes, grilled king oyster mushrooms and Grana Padano shavings.

Look's like we are going to need a bigger team.

Sadly at the end of the summer we will be losing a couple of our wonderful service team at Nuovo as they move out of the Shire.

This is evening work from 5pm and will include most Friday and Saturdays. (Not Sundays). Due to the bar work that is part of the job we need over 18s only please.
