Q. What is your most memorable moment during your time here?
A. I’d say my most memorable moment has been earning the 3 rosettes and going to awards night to be around others in the industry.

Q. How have you seen the industry evolve over the years?
A. I’ve seen the industry evolve with implementing new techniques in the cooking & baking process, with an influx of different influences and flavours.

Q. What’s the biggest lesson you’ve learned over the years?
A. The biggest lesson I’ve learned is to enjoy what you do and to be open to new ideas, and always learn new ways.

What is your favourite dish?
It's Creedy Carver Duck, served with kielbasa and bean cassoulet. Kielbasa reminds me my own country, Poland.

The Yard Castor - in the gardens of the Chubby, we're adding an undercover, heated area, enabling year-round informal dining, opening this spring and serving creative twists on classics, with bursting flavours, as well as an extensive a cocktail menu

Westgate Bakery - an artisan bakery and licensed cafe in Grantham's Market Place, opening this spring

Westgate 1852 - a vibrant brasserie serving modern dishes in a relaxed and informal setting at the historic Westgate Hall in Grantham, opening in 2025
