Sweet potato, chickpea curry with spinach flatbreads. π
These homemade flatbreads were so easy to make. Blend half a bag of spinach with 100g of Greek yoghurt and a splash of dairy free milk. Pour into a bowl and add flour to form a dough.
Shape and flatten, dry fry in a hot pan for 2-3min on each side.
Serve with curry or reheat in a toaster for a lunch topped with a fresh crunchy salad.
Crispy Tofu Lettuce Wraps with a Mint & Cucumber Yoghurt.
Recipe π
Crumble 100g of organic tofu into a hot pan with a small tsp of olive oil.
Add 1 tsp of curry spices and Β½ of garlic and onion powder.
Allow the tofu to crisp up.
Meanwhile, chop cucumber and add a tsp of mint sauce to natural Greek yoghurt, season, and set aside.
Grab 3 fresh lettuce leaves, add the Crispy curried tofu, and top with the mint and cucumber yoghurt.
I've added some homemade purple coleslaw to mine, which is just shredded purple cabbage and red onion mixed with mayo.
Cod fishcake with crisp potatoes, veg, and a boiled egg salad.
This was a beautiful little weekend meal. I've been focused on eating extra clean to try and deal with some nausea I've had. So far, so good. Remember, food can be the best medicine. π

His steak sandwich, with the brightest orange egg yolks I've ever seen.
I had their seasonal quiche, which was so rich and delicious. It came with a grilled courgette, feta, and quinoa side salad. π
It's definitely worth a visit. We'll be back for sure. Beautiful menu!

It's the perfect time of the year for foraging these beautiful blackberries. They are abundant in the English countryside and naturally organic. Pick some and get inspired.
Healthy protein chocolate fruit & nut bars. π« π
2 bars of good quality dark chocolate
Large cup of mixed nuts, chopped. These contain - walnuts, cashews, almonds, brazil nuts, hazelnuts and chia seeds.
Large cups of mixed dried fruit & peel.
Peanut butter and extra nuts for the top.
Melt the chocolate in a large bowl.
Add in your desired amount of chopped nuts and dried fruit. Lay into a lined tin and top with peanut butter and extra nuts of your choice. Chill in the fridge until set and then cut into bars or mini chocolate bites. It's that easy!

Fresh lavender from our morning walk to make this raspberry and lavender infused lemonade. A beautiful summer drink. βοΈ
Just throw your fruits and flowers into a glass pitcher, top up with your favourite lemonade, and let it infuse in the fridge.
Using leftover veg to make a tasty broccoli and tomato, 2 egg omelette for breakfast. I topped it with some herby natural yoghurt and cheese.
Homemade truffle & super greens hummus π π
Blend -
1 can of chickpeas
2 tsp of tahini
1tsp of super greens powder
1Β½ garlic cloves
3tsp of truffle oil
Juice of half a lemon
Good pinch of salt
Spoon into a jar and keep in the fridge, spread it on flatbreads, spoon into salads, and use it as a dip.
Shift away from the boring toast toppings and get creative!
This took minutes to make and will definitely set me up until lunchtime. π

The most delicious thing I've eaten in AGES! Pasta filled with truffle and 2 types of wild mushrooms. In a tomato sauce I made by cooking down fresh organic tomatoes with a whole head of garlic and fresh basil. Topped with truffle cheese.

There are many choices available to us women in this life β but when it comes to your body, there are only two:
Accept it
Or donβt.
You see, if you choose to accept your body, you will soon start to love it, admire it, look after it. These things all follow in the wake of your acceptance.
When you realise that this vessel for your soul, for your spirit, is an instrument of such high design and fine tuning that it boggles the mind to even think about, you will enter into a phase which I like to call βpeace, at lastβ.
You will care nothing of spare fat, grey hairs, loose skin.
You will realise, eventually, that the bodyβs purpose is not to look good, to attract friends, partners, successes β that it is, in fact, your spirit which does all of those things.
If you would only allow it to shine through and work its magic.
Your body, my friends, has but one job, to see you safely through this adventure of life, to allow your spirit to reach its potential.
That is it.
If you are on the path of not accepting your body β you are in for a very long battle β against an enemy you have no power to defeat. Nature, time, biology, fateβ¦
You donβt have the weapons to fight those powers.
Wave the white flag.
Give in.
Accept.

Make yourself a toasted burrito! π― spice it up with some chilli, add flavour with garlic, and give yourself a sauce for dippin' π
These sunny evenings and time with friends are soooo needed. Summer is on the horizon, and it feels GOOD!

Chickpea Smash on Toast. π It's Monday, and I'm setting the tone for the week with a delicious, healthy plant-based breakfast.
Tip - drain the chickpeas into a bowl and fill with water. Grab some chickpeas in the water and firmly rub your hands together to remove the skins. When the skins float to the top, gently pour the water off, and the skins will go with it.
Smash the chickpeas with a potato masher or fork. Add Β½ finely chopped red pepper, 1 spring onion and some shredded spinach, 2tbsp of mayo, salt, and pepper (chilli optional) mix and spread onto a thick slice of toast. I topped mine with beetroot, chia, and seeds.
This mix goes great in a sandwich, wrap, or salad.
Tuna Melt - Using up some leftover wraps for another delicious lunch idea. Mix some tuna with a tbsp of light mayo, some sweetcorn, chopped gherkin, and red pepper. Spread onto the wrap and grate over 30g of reduced fat cheese, sprinkle with chopped spinach. Fold and crisp up in a pan over medium heat until melting and delicious.
Coming in at just under 500kcals and around 35g of protien, it's nutritious budget friendly meal. Get in!

Our meal plan at the moment uses leftover chicken from our Sunday roast to make a stir fry dish on a Monday with whatever veg we've got going, we mix it up with either rice (which we batch cook and use over the next couple of days) or noodles, super budget friendly!
And then dip into some hot sauce.. delish! π

Thai food all the way, Pad Thai, Chilli & Thai basil with a fried egg and tempura vegetables. Delicious.
Fresh vibrant salad using the leftovers from a Sunday dinner with a few fried red peppers. Healthy budget friendly lunch. Perfect. π
Peanut butter keto biscuits! π Makes 16.
100g Almond flour
130g Peanut butter (smooth & runny)
40g powdered sweetner
1tsp of baking powder
1tsp vanilla extract
1 egg
Sea salt for sprinkling
(I added a sprinkle of coconut to ours too)
Mix all the ingredients together into a dough.
Portion and shape. Bake @180 for 8-10min for soft cookies or 12min for a more crunchy texture.
