Sunday Roast ideas for Sides

Soo I’ve shared this one a few times now, differing versions for quick side VS slightly longer version of the Sauce for a next level Mac N Cheese. This is just a quick version as it doesn’t need to be the Bomb when you already have so many other things going on on your plate, …but whats a Roast with out a Cauliflower Cheese 😊

Sunday Roast idea for Sides

Cabbage, with a Twist

The health benefits of Cabbage are out of this world, and you can make some incredible tasty foods with it whilst still keeping it’s nutritional benefits, even when you cook the heck out of it. It’s also a great veg to use the cook water for in your gravy. If you’re doing a Cabbage, Cauliflower or Broccoli I would strongly recommend not cutting them up, but cooking them whole, this increases variant in texture 😊

However, ….. Slice your Cabbage up into thin (ish) slices, grab some asparagus, chop those lil beauties up, ….we’re gonna cook this dead quick to keep all it’s crunch! Add in 1 to 2 Tbsp’s of Oil ( not Olive) add in a couple of sloshes of Balsamic Vinegar, half a tsp of sugar, cook quick on a high heat in a high sided pan, …….if you wanted to shift this to legend level, finely chop up a red Jalapeno , fry it off before you add your cabbage and asparagus, chuck in some Cashews or Sesame seed…….sure it’s basic, but my GOSH ! That Flavour!

Sunday Roast ideas for Sides

Beans

Would could be simpler, yet often forgotten about, for me, a Roast ain’t a Roast with out these lil goodies 😊 Simplicity level -1 , taste =10 😊

Grab yer Green Beans, top n tail them, then slice them up how ever you wish ( we like ours quite small )

Throw them in a small dish, Add Black Pepper, dust a lil Garlic Powder, we’re using 2 tbsp’s of butter, give it a smooch around, pop it in the oven until they go wrinkly like yer gran.

How easy was that?

Sunday Roast ideas for Sides

Mash

Sure we all know what Mash is, but why does it have to be soooo damn dull, notch it up a bit 😊

Purchase a load of stuff that grow in the ground from a shop, better yet, or, sneak into the local allotment after dark.

We’re using things called Potatoes, we’ve got some Swede, a lil Parsnip, and some Carrots. (sweet potato would work too)
Chop them all up small, they’ll cook quicker and mash easier. As a rule, if your veg grow above ground, cook in boiling water ( this will help keep it’s crunch and texture 😉 ) If it grows in the ground, start with Cold Water.

Throw your Veg in a big pan….i don’t add salt to Veggies, ever, don’t do it, add afterwards if you really need to or I’ll smack your grubby hands.

Throw in a few herbs if you want, go too’s might be Basil, Thyme, Oregano .

Boil the heck out of it til you can poke a fork through the Swede.

Drain it.
Chuck it back in the Pan, add a lil butter, a lil of your fav milk ( I’d go Oat for this as you want that creaminess ) Chuck in a lil butter, work your forearms out as you Mash your Spuds 😉

When its all noooice and smooth, place in a dish, run a fork across the top giving it ‘trenches’, so it looks like a Borrowers Tractor has been up and down it.

Shove in the Oven until you get a crispy brown top .

Done.

Bo****ks in Sauce

The kids are all out, my Girlie is at a Rave, I’m cooking for one and wanna throw some nonsense together quickly.

Get some Pasta on - any pasta, this is a mash up 😊 Get your oven on.

Get a big mixing bowl, I didn’t have any mince, but I’ve got these Richmond Burgers which aren’t great at all. Lets make them INCREDIBLE!

Throw your burgers in the bowl, add what ever the heck you like, Onion, Paprika, some chilli flakes, Garlic, bit of Tom Puree, some sage, bit of thyme, rosemary, black pepper, what ever 😊 Give them a good smooch around til its all mixed in ( wash yer hands first you filthy animals)

Pull off lumps of your mixture and roll it into balls, place in a dish with jus a lil Oil ( I’m using Olive, which works great for this )

Slap ‘em in the oven, middle shelf for about 20 mins.

Whilst your bo****ks are cooking, make a sauce, C’mon, you know how to do this by now, if you don’t, have a search through my page or give me a shout and I’ll go through it again, a good Tom base is the key to sooo many easy dishes, you can then add flavour as you wish according to what you’re trying to achieve. (Use some of the pasta water for your sauce!) Throw in a hand ful of olives, you know, jus cos you’ve got some sat in a jar from the last time you promised yourself you’d make Pizza. Let that sauce simmer til your bo****ks are browned off.

Drain your Pasta, Take your balls out of the dish, throw the pasta in the dish, pour your sauce in, give it a smooch around. Bring your bo****ks back to the dish, top with Pepper, Scallion, Chives, and Cheese, slap back into your Fiery Furniss until cheese is melted.

Serve

Shove it in your face hole.

(Yeah, I know my hob needs cleaning, thank you )

Under a Tenner, Ten Minutes?
PEANUT BUTTER CURRY

(no really, trust me on this! It’s a doozy!)

All this stuff is from Asda, shop around and you’ll get it even Cheaper, here is EVERYTHING you’ll need 😊

Veg Stock 37p…………………………..( 1 cube )
Coconut Milk 400g 85p…………….( 400g)
Cayenne Pepper £1.20…………….( ½ tsp )
Chilli Flakes 70p ………………………(Pinch)
Paprika 70p……………………………..( 1 tsp )
Ground Coriander 70p…………….(1/2 tsp)
Peanut Butter £1.15……………….( x4 Tbsp)
Chickpeas x2 …45p each………..( x2 400g tins)
Tomato Puree 75p…………………( 2 Tbsp)
Onion 33p……………………………..( Slice it, chop it)
Garlic 25p …………………………….( 2 large cloves crushed )
Lime 25p ……………………………….( Cut into 4 )
Fresh Coriander 55p……………..( handful, chopped finely)
Basmati Rice £1.25 ……………….( just 1 cup)
That’s a Total of £9.95 ! 😊 😊 😊

Lets bang it all together !

1) Heat your Woo Pan, lil Oil ( not Olive) Throw in your Onion, Cook til soft like yer Nan. Add your Garlic .
2) Add your Spice Powders, mix like you’re the most bad ass DJ in town 😊
3) Add your Coconut Milk, Peanut Butter, Chickpeas, Tom Puree , Veg Stock, Stir 😊 Squeeze some of your Lime in there, Stir, stir some more whilst it comes up Bubbly 😊
4) Keep that Heat nice n high until it roostens up and thick like your best mate.

Serve in a deep bowl on a bed of Rice , top with finely chopped Coriander , or just simply with a Rice Side, dust with Paprika.

• Feeling flush? Search through our Page for home made Naan’s for dipping in that Sauce 😊 Or Pan fry some Tofu and stick that in .
• You can do this as a slow cook dish which increase the flavour 😊

With food prices how they are right now, it’s always worth going on a bit of hunt to see what you can source cheaper 😊
I have an Asda very close to my Home, and needed some bits for a recipe I’ll be sharing soon, this is what Asda would have got me

Tofu £2.30 for 280g
Sesame Seeds £2.00 for 43g

I’ve just found an Asian Supermarket close to my Office, and I’m feeling pretty happy!

Keeping it simple, but still delicious 😊
Sooo, this isn’t really cooking, but it making some quick basics more tasty so you still feel a little bit treated 😊 We don’t always have the time to cook from scratch, but its always worth making the mundane a bit more fun

The Chicken is by OMV (we’ve tried several, this isn’t the greatest tbh, but in a rush it will do.

The Chips are Homemade, cut FAT, Twice cooked, skins left on, Maris Piper, then chucked in a colander and shaken with Salt, Pepper, Scallion and finely chopped Red Chilli. I find the trick to a good Chip is leaving them in very cold water for 20 mins pre cooking.

Corn on the Cob, sure, you can boil it if you wish. For us, we rub them in Butter and Black Pepper, wrap in Tin Foil, place them in an own proof dish and cook for about 25 mins, soft, juicy and melty 😊

Beans, sure, beans from the can are ok, but have a play with them too! These are standard Baked beans, we’ve cooked them slooooow, and mixed in a ¼ of a tin of Chopped Toms, Paprika and jus a pinch of Chilli Powder, then topped with Chives, Black Pepper and jus a lil more Paprika giving them a real delicious smokey flavour.

“ Hey Pops, I like Potato, but can we do something different with them?”

Go on then, I will 😉

Try Woo Pan’s take on the incredible Fondant Potato! 😊
1) Peel yer Spuds ya filthy animals !
2) Cut them into fat slices of about 1.5 inch .
3) Use a small cookie cutter to make these beautiful little Rounds 😊
4) Pan fry until Golden and Crisp on both sides.
5) Crush 8 Cloves of Garlic with the back of a knife, roughly chop, add to your Pan and cook for a minute.

6) Throw in 150g of Butter
7) When it’s melted throw in Rosemary, Thyme, and 250ml of Stock.
8) Bring it to the Boil
9) Pop it in yer lovely lil Oven for about 40 minutes at 180c

That’s it, dead easy, but LOOKS great and tastes pretty flipping awesome too!

Go get yer cook on

(**Tips, as always, cook to the ‘feels’ according to your own tastes, use fresh herbs if you’re fortunate enough to have a swimming pool in yer back yard, equally dried will do 😊 - the Meal, yeah, it was damn good, but I should have made a sauce or gravy rather than relying on the ‘juice’ from the Fondant Potatoes )

Make this, Cheaper than a Tenner, easier than your Ex, get yer cook on
“Can you make a healthy family meal for 4 adults, for under a Tenner ?” …….go on then, I will 😉
Total Cost is £9.80, that’s £2,45 per person, but you’ve probably got most of these things in stock any way!
But if you haven’t, this is all of it (minus Salt & Pepper ) if you literally only have a bare Cupboard and an empty Woo Pan!
8 Richmond Sausages ( Iceland £2)
Basmati Rice (Asda £1.25)
Red Pepper (Asda 60p)
Onion (Asda 30p)
Chopped Toms x2 (Asda, 30p per can, 60p)
Black Beans (Asda 70p)
Chick Peas ( Asda 65p)
Garlic x2 (Asda 50p)
Cumin (Asda70p)
Chilli Powder (Asda 70p)
Paprika (Asda 70p)
Coriander (Asda 50p , or, don’t pay for your Gas bill this month and get Fresh 😉 )
Veg Stock (Asda 60p) ….( Or, make your own!! )

1) Stick yer Oven on, throw your sausages in a casserole dish, middle shelf , Mark 7

2) Rough chop your Onion, Garlic, Pepper, chuck in to an oiled pan and cook til translucent

3) Drain your Black Beans and Chick Peas – chuck ‘em in with your Onions and Peppers, add your spices (1tsp of each , add more later according to your tastes) cook for a further 5 mins.

4) Pour in 1 tin of Toms, 1/3 tin of water, Add your stock, Stir. Add your Sausages.

5) The longer and slower you cook this, the better it gets, we did it for 40 mins, cook at least until the fluid reduces, if you can hold out til the sun explodes it will taste even better.

6) Serve with your rice, get your face in it.

Alternatively , throw all these ingredients into your slow cooker whilst you have breakfast and come home to this amazing treat 😊

Folk had asked for the recipe, so go on then, go fill yer face with this Family Classic
(** As always, I cook to the feels, what i'm giving you is a Yorkshire base that you can add and alter to your own tastes 😊)

1) Stick yer Oven on, I'm at Gas Mark 7
2) Get a High Sided dish, put a bit of oil in it, rapeseed, veg of sunflower will do, not heavy flavoured oil.
3) Grab a handful of your fav sausages pop them in the dish, pop it in the oven, about 3/4's of the way up.
4) Get a large mixing bowl, Add:
240g Self Raising Flour
1 heaped Tsp of Baking Powder
1 tsp coarse Salt
2Tsp Dijon Mustard (trust me on this)
Chuck in some Thyme and Rosemary
Optional - a Tsp of Turmeric gives your batter a lovely Yellow
Mix with roughly 350ml of Oat Milk
Give it all a Mix
Then throw in some roughly chopped Red Onion, Mix again.

5) Get your Dish out the Oven, take the Sausages out, pour the Batter into the hot dish, (you should get a rise around the edges pretty much instantly) Place your Sausages back into the Dish , add some more red onion and/or herbs on top - you know it makes sense

6) Place it back in the oven, keep that door shut, you need to really trap the heat to get a good pudding! Cook until it looks fecking amazing.

** Tips, We did Stuffing, in the last ten minutes of your stuffing cooking, lay lightly oiled asparagus on top, this saves on washing up and also, like me, it looks dead pretty. Plus, no one like soggy Asparagus, so get it roasted. **
** Cabbage, you wanna keep all that yummy goodness, cook your Cabbage WHOLE don't even think about cutting that fella up before you cook it, this will give you more taste, flavour and texture**
** When ever you have Veg Peel, don't bin it, freeze it, this can then be reused to make next level stock for gravy **
You wanna go Gluten free? Try playing around with this dish using Gram Flour or Chickpea Flour.

Go on then, go make it!

Cold? Wintery? Got 25 minutes spare? Stop moaning and make this. Mushroom Stroganoff for 4 grown ass adults.
**( As always, my cooking is done to the feels, this will give you the basic version, then add up on Flavs to your own tastes ;) :) ) **

Go stick your rice on, you know the deal by now, BIG Pan so it can move about, don't you dare cook it in boiling water, don't you dare give it a stir.....Basmati Rice, Pan, Cold Water , bring to boil, turn down to rolling boil, ease off to simmer after 15 mins, Drain, fluff with fork, perfect rice every time.

Grab:
x2 Red Onions
x4 Big Garlic Cloves
Black Pepper
Dried Parsley (use fresh if you've recently cancelled your Netflix or found a quid in the sofa)
x 2 Tsp Paprika
x 2 Mustard ( whole grain is best, or go Dijon, failing that, yah know, jus Mustard, but do get mustard in there!
x2 tsp Lemon Juice or beg your local politician for a real Lemon
x2 400ml cans of coconut milk
800g of Mushrooms (Ok, sooo, this will work with standard white shrooms and still taste great, but if you want next level, go Chestnut Mushrooms and a handful of Oyster/ Forest)

Do This
1) Chop your Onions how ever you like, crush or chop your garlic, send them straight to a medium heat pan with veg oil or sunflower oil ( not anything strong in flav) Use a large shallow pan, this will help the shrooms break down in a bit, saute them.

2) Chop all your shrooms how ever you wish, add to your onions and garlic in the pan ( they should now be done ) let them break down on a medium heat. Add x 2 to 3 tsp of lemon juice or fresh squeezed lemon.

3) As mushrooms break down, add your 2 cans of coconut milk, black pepper to taste ( i use a fair bit!) add your Paprika, Mustard and Parsley. Stir. Simmer.

4) Taste and add the above mentioned according to your own tastes. Serve with Rice, and/or a Garlic Bread

How easy was that?

Drink with a Oaky Red Wine or a Peaty Whisky

We call it Gypsy Toast, we're told that's not correct, so, we call it Gypsy Toast. Some might call it 'French Toast' , 'Sprinkle Bread', 'Cinnamon Bread' - whatever, either way, for a disgustingly cheap Breakfast or Supper, make this. Go on then!
(The image is jus with standard bread, but usually we'd use a FAT slice of farmhouse, the older your bread, the better, unless it's powdery and green of course)

1)Grab a Ramakin, add granulated sugar and ground cinnamon, mix, that's your sprinkle (how hard was that?)

2) Use slice bread, or go dead posh, slice up some old fat bread into 1 inch slices, put to one side.

3) Grab yer mixing bowl, add :
1/4 cup of Cornstarch (this is the voodoo that will make your bread crispy rather than soggier than a sumo wrestlers under crackers)
1 tsp of Ground Flax (optional)
1/2 to 1 tsp of Baking Powder
1 to 2 tsp of Ground Cinnamon according to taste
2 tsp of Pure Maple Syrup
1 tsp of Vanilla
Mix all those dry ingredients.

Add 1 cup of milk ...Mix, Mix it well.

4) Heat up your Woo Pan, pref with Butter rather than Oil, but an Oil will do, don't use anything flavoured like Olive .

5) Grab a slice of your bread, drop it in your mix for 10 secs, then flips it for 10 secs.

6) Add your dipped Bread to your Woo Pan, on a low to medium heat, cook til crispy golden brown and flip.

7) Shove it on a plate, sprinkle a dusting on it from your ramakin, shove it in your face, or someone else's.

Tip: *Re Whisk your mix between each bread dip, Cornstarch will always sink to the bottom. * This is ideal for old left over bread, saving pennies and waste. * As always, i Cook to the feels, so this is a base recipe, i tend to go heavier on the maple and cinnamon. * If your Pan smoke, don't be a chump, turn it down or take it off the heat. * Make it Gluten Free by changing your Bread ;)

Make to the "feels" , but here's a rough guide to the ' Bang bang meets the Med' that Tronics and I made last night 🌙 Dead simple, you can get this down to under 10 minutes!

The Tempura:
Big mixing bowl 🍲
50g cornstarch
35g flour
10g rice flour
1 tsp baking powder 🥄
1/2 cup sparkling water 🧊💧
Chuck in what ever 🌿 herbs/spices🌶 you want for your seasoning or just go pure
Whisk the pants out of it quickly and viciously tol your wrist hurts like you've just had a world record Handy McDaniel 😉😲

Heat Oil in your Woo Pan ( not olive oil! We used a vegetable oil, sunflower would also do)

🥦 chuck into your Tempura what ever flipping chunky veg you want, we went with broccoli as it takes the light batter really well 🔪

Fry to light golden brown and crisp

The Sauce:
Grab a cereal bowl 🥣
Add some scoops of peanut butter 🥜
Some good Soy Sauce
A dash of seaseme oil
Some maple 🍁 syrup
And a slosh of your fav chilli sauce
Using a small whisk, give your other wrist some exercise.

Olives 🫒 in a cereal bowl, if you're using jarred, drain them WELL and rinse them or they taste like they've been stored in a sumo wrestlers un**es.
Add a LITTLE of a good light oil, a LITTLE balsamic, dash of lime/lemon, bit of basil and/or oregano - Add cubed cheese 🧀 , we're using the new Cathedral City which has grabbed our " vegan cheese is sh€t" debate and thrown it out of a 4 story window, it's bloody amazing!!

Plate up - top with generous helpings of your sauce, finish with crushed black pepper, cilantro, scallion and chilli flakes.

Eat until you can't move without murmuring "oouch, I think I'm full" - Enjoy ! Its yum yum pon de tum tum 🥂🍻🍽

Chickpea Cauli Massala, get it made 😊
1) Rice, go basmati, Big Pan, 3 tsp of turmeric, add rice, add water, bring to rolling boil, tweak down, simmer. Don't do any of that rinsing stirring nonsense. Drain when soft.
2) Empty 2 cans of chicken peas, drain, prep a cauli into smalls pieces .
3) fine chop 1 inch of ginger, 3 garlic gloves, 1 white onion, 1 chilli, add to a hot Pan with 1 tap of fenugreek, caramelise.
4) Throw in your cauli and about 28oz of diced toms.
5) Chuck in 1 1/2 Tbs of garam massage, 1/2 tsp of smoked paprika, 1/2 tsp chilli powder, yer chicken peas.Simmer for 5 min
6) add 1/2 cup of water, you may need more to taste/ texture
7) add tomato paste
8) add 1/2 tsp cilantro , a couple of curry leaves, stir, simmer.
9) buy Naans, or make them, (dead easy, recipe on here)
10) Use as a side for a Curry Night, or, Serve with Rice,Breads ,Pickles, your fav drink and a Welsh Lass if you have one. 😊😌
