I had the distinct pleasure of making a Raw Mango Cheezecake for 's 35th birthday today! It had been a little while since I've done fruit roses, but I'm very happy with the result, some diced dried organic mango, pistachios and cornflowers for good measure. Using unfamiliar hobs at the AirBnB I thought I had burned this dish 😢 but moments after serving it, listening to the guests guzzling it up and exclaiming how delicious it was put me right at ease.

This Spiced Carrot Cake, with Cream Cheeze Frosting is fast becoming one of our most popular cakes. We served it at day retreat last Friday and this weekend it will be part of Pilates retreat. It's totally understandable why, it's utterly delicious, moist and light.

Shout out to for these sensational Curried Pea Pasties keeping the Pellegrini family going during busy Easter holidays with a newborn. Lazy (tired) chef vibes, with homemade air-fried potato wedges and steamed collared asparagus.

Alright, Richard completely converted me to glossy, gooey brownies. I was always team gooey vs. cakey but I was all about a Matt finish and chocolate chips or peanut butter swirls on top. Not anymore, these decadent brownies are the only way forward for me, find the recipe in his magnificent yellow book.

I've made this Sweet Potato and Bean Tagine for at least three different retreats in the past few months and it always goes down a storm! Comforting, warm and packed full of goodies. Who says healthy food needs to be boring? 🤔

I'm trying to be less precious about my grid this year, perfectionist tendencies led me to not posting for weeks on end last year despite being super busy! We trialled these mini Red Pepper, "Bacon" and Broccoli quiches at a 90 person wedding at the end of May and they were a smash hit! The got a handful of the few leftover the following day, after their Wi******er social run and loved them too 💚

This heat has me thinking it's about time to make these delicious double chocolate mini ice-creams again 💚☀️ What do you think?

Forgive me Facebook for I have sinned, it's been 7 weeks since my last post 😜 We've just been so busy with various different events, so here's one of the few quick snaps I remembered to take at a lovely little hen do last weekend! We served a Mediterranean Mezze, followed by Lasagna with Tenderstem Broccoli. We finished with Sticky Toffee Pudding, Salted Date Caramel and Vanilla Bean Ice-Cream

Ah, we got a glimpse of spring sunshine and now it's all rainy again! So I say f**k it and lean into some comfort food to warm your soul, this glossy mac and cheeze is absolutely spot on for that.
