Excited to serve this Sika deer from Pendine where there is a wild herd, our huntsman normally sources Fallow deer from Pembrokeshire estates.

Sika deer known as the Northern spotted or Japanese deer was introduced to the UK in the 1860.

There is a beautiful layer of fat on the haunch which we rendered down to sear the final loin, served with caramelised red cabbage, flavours of mushroom 🍄, braised venison in Feuille de brick, goats cheese cream, roast butternut, spinach, dauphinoise and dark chocolate jus

Fantastic day yesterday and an honour to cook for a Welsh legend “Sir Terry Mathews” and his group of friends, famed for owning the Celtic manor & other hotel’s & restaurants in Wales, Sir Terry really puts Wales on the map when it comes to hospitality.

It was also 17 years since Lindsey and I were handed the keys to the Brit, it’s been interesting to say the least, we’ve worked with some amazing people along the way, it was pointed out by my sous chef that he was 4 when we took on the pub🙈😂
