It's meat-free Monday. Here is a plant-based version of the classic family favourite – spaghetti Bolognese! Don’t forget to save to try later.
3 cloves garlic, crushed
1 red onion, diced
2 handfuls of mushrooms
1 aubergine, cubed
1 tbsp honey, maple syrup or agave nectar
2 carrots, grated
2 tbsp soy sauce
1 tbsp balsamic vinegar
2 tbsp tomato puree
1 tbsp marmite
1 tbsp mixed herbs
1 can green lentils
1 small bottle red wine
1 can chopped tomatoes
Salt and pepper
Add the onion, garlic and a drizzle of olive oil to a large saucepan and sauté on a medium heat. Once softened add the mushroom and allow to cook through for around 5 minutes. Next add the aubergine and season well with salt and pepper (the salt will allow the aubergine to sweat). Allow the aubergine to cook through properly (for around 10 minutes) and drizzle with honey. Add the carrot and cook for a few minutes, then add soy sauce, balsamic, tomato puree, marmite, mixed herbs and stir through. Add lentils, red wine, chopped tomatoes and simmer for around 30 minutes. Season to taste with salt and pepper. Serve with wholegrain spaghetti!

Ingredients
12 small wholemeal tortillas
2 cans green lentils
¾ cup walnuts
1 vegetable stock cube or 2 tsp
bouillon powder
½ tbsp olive oil
1 onion, diced
4 cloves garlic, crushed
2 tbsp tomato puree
1 tbsp chilli powder
1 tbsp cumin powder
1 tsp smoked paprika
1 tsp oregano
2 large or 3 medium ripe avocados
½ red onion
1 lime, juiced
½ red or green chilli
A small handful of cherry tomatoes,
chopped
Salt and pepper
½ cup cashews
¼ cup boiling water
Recipe 👇👇
1. Pre-heat the oven to 180 degrees.
2. In a saucepan, sauté the onion in a little oil until they become
translucent, after a couple of minutes add the garlic and cook for
a further 1-2 minutes. Next add the walnuts and sauté for a few
minutes until lightly toasted. Then add the spices and tomato
puree until well combined. Finally add the cans of cooked lentils
to the mix and stir through until well mixed. Set aside and use a
fork to mash the lentils to create a ‘meatier’ texture.
3. For the guacamole, mash the avocado, then add the remaining
ingredients and stir to combine.
4. For the cashew cream, add the ingredients to a bowl and allow
the cashews to soften for around 10 minutes. Then blend until
smooth. Set aside.
5. Now its time to assemble your tacos. Add the lentil mixture to
each wholemeal tortilla, fold in half and lay flat on a cooking tray,
add to the oven for around 5 minutes until lightly browned and
crispy, turning halfway. Keep a close eye to make sure they don’t
burn. Once cooked, top with guacamole and cashew sauce.

A quick and simple 10-minute savoury toast recipe. Smash some ripe avocado and spread across toasted bread, sprinkle over some chopped tomatoes, onion, chilli flakes, salt and pepper, and drizzle a little balsamic glaze. If you want to spruce up the smashed avocado, you can add a little crushed garlic, diced pepper and chillies. Enjoy!
