Meet our Head Chef, Stephan Guinebault. He’s been with us since 2006 and is the bedrock of our kitchen. His love of seasonal, local produce and close supplier relationship has been at the forefront of what he does before provenance became ‘the thing’. You won’t find him cutting corners either…his love of food and quality produce extends to its preparation, all of which is done in our kitchens, nothing arrives butchered for example, as he is passionate about minimising wastage and keeping classical skills alive in the kitchen. This is what makes the flavour in his sauces and stocks so rich and flavoursome.
More magic, our garden team saving the day and coming to the rescue!
