The last thing people will remember of your cake is their last encounter with it: on their plate while eating it.
This means that you can make the most gorgeous cake in the world, if the taste doesn't follow, customers will be disappointed...
Here are a few tips of the trade l've learnt in a few years I’ve been in business:
1)Limit the amount of flavours per cake. More than 3 and people's taste buds get a bit lost trying to figure out what's what.
2)Ingredients quality is crucial: going cheap will definitely have an impact on taste.
3)Limit the sweetness for the flavours to have more impact.
4)Moisture: Soaking the sponge ,adding fruit juices or coulis is an option, and working with fresh sponges really helps too , I fill my cakes within 24 hrs of baking.

My relationship with numbers has never been great, however slowly learning to be friends as apparently in business it doesnt matter how creative you are, in the end its the numbers that count 😆
