We have had the amazingly talented and friend of ours in to do a wall mural on the will be the focal point of the restaurant dining room.
It is everything we wanted and more it is truly stunning.
I’ll be releasing pieces of this masterpiece running up to our re opening.

Such sad news to wake up to this morning. Myself and Yohan was lucky enough to have the pleasure of cooking for David back when we had our little room at the Gillygate.
He was so enthusiastic and joyful about all the food we cooked and took a real interest in our future plans.
Our thoughts are with his family and friends.
What a fantastic human he really was.

Sometimes things aren’t bragged about enough.
This is something I can’t stop telling people about this.
We have been lucky enough to be one of the select few restaurants to get BRITISH LINE CAUGHT TUNA. I can tell you now this stuff is exceptional.
Just an example of what we are doing here is Tuna Carpaccio - Kimchi - Lemon Juice - Chive Oil - Soubise - Melba Toast.
It’s seriously good
This is something I’ve been playing around with for a while.
Monk tail - Squash XO - Soy - Lemon - Coffee
Trying to cut down on waste and by product of food and drink we use the used coffee pucks that come out after making an espresso and dry cure Monk tail for 24hours this gives it a real earthy tone which compliments its naturally sweet flavour, we pair this with squash XO and an umami broth. With a little crisp from the seaweed
It hits all the spots just right.

It’s the little things that count.
At Fish&Forest we make sure we put 100% into everything we do. We like to think we cook with soul.
Venison - Jerusalem Artichoke - Anise Jus - Chive Oil - Coffee
Mallard - J chokes - Jus
Can’t get much simpler than this. But the flavour is super complex and mouthwatering.
We have a spiced jus made from mallard stock, red wine (good quality), star anise, cloves, green peppercorns.
Jerusalem Artichokes salt baked then deep fried for a crispy skin but soft sweet centre, then we puree the J Chokes with dark chocolate and coffee to give the dish a deep flavour of umami and bitterness.
This is one for the recipe books it’s mega.

If you can trust me on one thing this dish may look simple but it’s complex in flavour and absolutely epic.
This absolute banger is back. It’s a perfect hybrid between indulgent, light and powerful.
King Scallops, Sweetcorn, Nduja
No fuss cooking pan fried 80%-20% then base with butter and Nduja.
It’s the simple things that bring the most pleasure.

Konro grilled halibut.
As we are approaching the last of the super amazing Gigha a halibut, I thought I would put a post appreciation. This produce is honestly some of the best around.
We serve a halibut with our take on a Grenobloise sauce with capers and pickled samphire. It’s such a super simple dish, but we believe it highlights how incredible the fish is.
again for the 2nd consecutive year we are in the guide.
It’s a fantastic effort from our team.
