Tamarind, a fruit widely used in Thai cuisine - an essential ingredient even. Our chefs use tamarind in sauces especially, for the fish ball skewers and for the phad thai kung too - giving those dishes a tangy, sweet-sour like flavour. 😋

🥭Nam dok mai - Thai mangoes, why so famous? Thailand is located just above the equator, making it one of the most perfect locations for mangoes to go ripe, producing the juiciest and sweetest flesh. Not surprising these mangoes are so popular. We only use these Thai beauties for the mango sticky rice dessert! 😉

Her favourite Siam dish is laab moo, because of its umami-like flavours combining salty, sour and spicy notes. Fun fact: she’ll have a different hair colour almost every week, we love it! 😆

Chicken skewers, grilled to absolute juicy perfection. Our Thai kitchen brigade only uses Australian free-range chicken that is free from hormones - zero nasties. Have it as a snack or add-on to your noodles…at Causeway Bay it’s part of the Khao Soi noodle dish as well, we highly recommend!

Meet the lovely Rose! She’s been with Siam (Causeway Bay) for 7 months now and plays a huge role in its daily operations. She recommends Phad Thai paired with a Thai milk tea for a tasty meal any time of day. When she’s not busy serving hungry humans 😂, she enjoys dancing in her free time - we’ve seen her moves, they’re pretty impressive!
Ava, a superstar at our , Tsuen Wan West location. She’s only been with us three months, but has been phenomenal working the floor during those busy hours especially - always ensuring you are served quickly and efficiently. Her personal favourite…the boat noodles, “the soup base is authentic and the ingredients are quality. "

A bit sweet, a bit sour, a hint of spiciness - a combination that is addictive. 😋 You’ll find sliced chicken, straw mushrooms, slices of tofu and coriander in that soup - a soup base we take seriously. We’re known for our boat noodles. What makes them so special? It’s the broth folks. An aromatic broth infused with galangal, cinnamon, star anise and pig’s blood. It is then slow-cooked for 12 hours long, it is important all those flavours are released properly before serving.
