今日同大家介紹一下Alive Food Christmas Special - Vegan Christmas Stollen 純素德式聖誕蛋糕🤤
Stollen 是德國傳統聖誕麵包，歷史悠久，味道同好多歐洲的甜點麵包相似，紮實鬆軟嘅口感近似蛋糕，豐富且多層次嘅風味，係屬於冬天的味道～～
Alive Food嘅Stollen主要材料係我哋自家培養嘅酸種酵母、水同意大利無漂麵粉，加入糖漬橙皮、柑橘皮蜜餞、葡萄乾、杏仁、及小豆蔻、肉桂等等不同材料。
Stollen另外一個特色係麵包裡面夾有「杏仁膏」，杏仁膏是以特幼杏仁粉、蛋白同糖粉製成的黏性糖膏。由於無加入雞蛋，所以杏仁膏是以杏仁奶和亞麻籽粉黏合，並減少糖嘅份量，食起來甜而不膩☺️而且存放日期可長達1個月，襯有優惠早啲買個嚟過聖誕啦🎄

Introducing the new 2023 Alive Food series - Mini Sourdough loaf! 🍞 We have always been dedicated to developing new products, and many customers have mentioned that our 600g bread is sometimes too big for their consumption. In light of this feedback, we decided to create smaller-sized sourdough buns.
Today, we would like to introduce the new flavor: Double Chocolate Sourdough Sweet loaf! 🍞 With 72% chocolate and chocolate powder, combined with our in-house 36-hour fermented sourdough, these loaf will give you a whole new sensation. 😋

Our brioche loaf (750g) is crafted with our very own in-house sourdough starter and undergoes a lengthy fermentation process, resulting in a deliciously spongy and healthy loaf. 肉桂卷係北美同北歐好常食用嘅一道點心，人民甚至會將佢當做早餐，肉桂卷起源於瑞典，係瑞典，甚至為了肉桂卷而有特別的節日，可見肉桂卷在歐美國家是多麼的重要😋😋
我哋Alive Food嘅酥皮肉桂卷比傳統肉桂卷更加鬆脆！包你一試愛上🤤
而我哋所有酥皮糕點都是100％以酸種作為基底，並由我哋自家培養嘅發酵菌種制成，所以不含化學劑同防腐劑。 佢哋雖然需要更長嘅發酵時間同更多技術，但係會使我哋嘅肉桂卷更鬆脆，結構更加有層次。
而我們還研發了一種健康配方，牛油含量遠低於市面上嘅糕點，而且又唔會影響口感同味道。
Our sourdough Cinnamon Roll are 100% sourdough based, we cultivate our own starter that is free of chemicals and preservatives. It requires a longer fermentation time with extra craftsmanship, which gives our pastry a crispier layers and a more structured texture. We also developed a healthy recipe with less butter without compromising the flavour.

所選的麵粉都是細而不漂白的。 而 Manitoba x Italy grain 的這種完美混合麵粉是由Paolo家族的意大利巴巴拉第三代磨坊所擁有及生產。 世界各地許多米其林級別的星級餐廳都喜歡它，例如8 1/2 Otto E Mezzo Bombana。
糖
我們所選擇使用的是未加工的甘蔗所製成的有機蔗糖,而有機原料蔗糖通常被認為是精製白糖的替代品,減少了加工程序,便可以從甘蔗中保留更多的天然維生素以及礦物質。
鹽
我們使用喜馬拉雅粉紅色鹽幫助我們的發酵，因為它蘊含有鉀，鈣和鎂等礦物質，可為您的身體提供更多不同的營養！
Flour
Fine and unbleached. This perfect blend of Manitoba x Italy grain is produced by A third-generation historical mill owned by the Paolo Family in Barbara, Italy. Which is loved by a lot of Michelin starred restaurants such as 8 1/2 Otto E Mezzo Bombana.
Sugar
We choose to use organic raw cane sugar that is made from sugarcane which has not been refined resulting in a healthier choice for our body. Organic raw cane sugar is often considered as a replacement for refined white sugars. The less processed approach also retains more natural vitamins and minerals from the sugar cane juice
Salt
We use Himalayan pink salt for our fermentation, it contains minerals like potassium, calcium, and magnesium which fuels your body with more nutrients!
