Pork pluma is a term used to describe a particular cut of pork. It refers to a thin, tender, and flavorful piece of meat that comes from the shoulder or loin of the pig.

Pork pluma is commonly used in traditional Spanish and Latin American cuisine, where it is often seasoned with herbs, spices, or marinades to enhance its taste. It is a popular choice for dishes like grilled pork pluma with chimichurri sauce, pork pluma tacos, or pork pluma skewers. At SUIT, chef used HK traditional homemade sauce XO, which developed in the 1980s in Hong Kong for Cantonese cuisine, XO sauce is made of roughly-chopped dried seafood, including dried scallops, fish and shrimp, which are cooked with chilli peppers, onions and garlic.

We are proudly to announce that SUIT will be collaborating with Toyokuni Brewery from Fukushima for a one night only sake pairing dinner. It will be a 6-course dinner pairing with sake from Toyokuni Brewery.  In addition, Mr. Kensei Yanai, the president of the brewery will also be there to join us. 
 
我哋好開心同大家講SUIT將會聯同來自日本福島嘅豐國酒造合作,推出一晚限定嘅清酒配食晚餐。今個晚餐會為你呈獻六道菜式,配合六款豐國酒造嘅清酒,當晚更加好榮幸咁邀請到酒藏藏主矢內賢征先生嚟同大家介紹佢哋嘅出品。 
 
About the Brewery:  
Toyokuni Brewery had a history of sake brewing for over 200 years. They inherited the traditional flavour under the brand “Azuma Toyokuni”, as well as created a new concept of modern sake during 2011 “Ibuki” by Mr. Kensei Yanai, the president of the brewery. The “Ibuki series” fuses the tradition and standardization in sake with the modern culture, reaching to our daily lives. 
 
豐國酒造於江戶時代之天保年間 (約 1830 年)、從事超過 200 年的清酒事業。 除了重視由創立以來、以「傳統」和「格式」為準的「東豐國」,於 2011 年, 由第 9 代藏主矢內賢佂先生創作的「一步己」、更是「繼承傳統格式和現代文化 融合」。

三黃雞飯

加入本地煲仔飯元素的黃油雞飯,以炭燒形式炮製脆皮三黃雞,並用三款不同口味的時令雜菌與加入高湯的珍珠米同時煮熟後,最後淋上特製香蔥豉油,充滿油香的黃油雞飯,份外齒頰留香!

Using the local element clay-pot rice as our inspiration of the 𝗬𝗘𝗟𝗟𝗢𝗪 𝗖𝗛𝗜𝗖𝗞𝗘𝗡 𝗥𝗜𝗖𝗘. Using charcoal-grilled
three-yellow chicken (Beak, feet and their feather are all yellow) with toasted and golden layer of rice underneath, this crusty layer is an intensely flavored with assorted mushrooms. Let’s take joy in scraping up the crispy bits.

I believe a lot of people came across crème brûlée, but SUIT making a savory crème brûlée this time with mushroom, the caramelized top for the crust that every crème brûlée needs with the homemade hojicha crisp!

甜味的布甸相信大家都吃過,但今次SUIT以 雜菌入饌,推出帶鹹味的焦糖野菌布甸!將 多款野菌混合打蓉後,在表面加糖並以火槍 燒成焦糖,最後加入自家製焙茶脆片,香甜 帶脆與微鹹幼滑的口感,交織出和諧又美味 的佳餚。
