‘Basil Lemongrass Pornstar Martini’
Elevating classics has always been a goal of ours, partially because classics have stood the test of time, and provide us with shells that allow room for creativity.
The Pornstar Martini is a modern classic that despite its otherwise notable fame in dive bars, rarely sees the light of day in cocktail bars. We’ve decided to elegant-ify the cocktail by adding a herbal touch via basil and lemongrass, creating a new version of the Pornstar Martini that speaks of complexity, but also tastes just as mouth watering as the original.

‘Wolf Peach Highball V2’
The only cocktail that has remained on our menu since day one, the Wolf Peach Highball V2 is a legacy evolved. With Apothecary changing its direction to featuring exclusively fresh produce, the eventual shift away from stock juices have elevated the Wolf Peach Highball V2 to an entirely new dimension via freshly clarified tomato as opposed to clarifying stock tomato juice.
The combination of Tomato and Perilla paves way for the activation of the entire palate, whilst vermouth adds a much needed complexity to the original recipe. Salted plum powder has been moved from a core flavour into the garnish - in the form of a delicious salted plum marinated tomato.
Now this is what we’d call a tomato cocktail.

‘Hazelnut Sour’
A twist on the Amaretto Sour, the Hazelnut Sour is our rebalanced signature inspired by deconstructing a cheese board. Hazelnut, apricot and clove make up the core flavours whilst a touch of olive brine brightens up the sweetness via salinity.
Cognac makes an important appearance with its grapey flavours, complimenting the light sharpness of grated Parmigianino Reggiano and its overall nuttiness.
We’ve even made a homemade almond biscuit just for a small snack. What’s not to love?

Bean-to-bar or "craft" chocolate is a category of chocolate making which focuses on flavour development starting at the cacao tree. A bean-to-bar maker’s goal is similar to that of a wine/whiskey maker; intentionally bringing out the terroir and focusing on high quality, creating distinctive tasting notes.
