✨時不知鮭✨
全世界的洄游魚到了秋季就會洄游至出生地產卵,「時不知」的時間觀念與一般白鮭魚不同,身體內不但沒有卵可產,洄游的時間也提早到四月底至六月中的春、夏交界時刻。日本人稱它做「時不知」,就是因為牠屬於「不知道時間」的鮭魚。

野生的「時不知」比起飼養的鮭魚,體積小一半,每一條僅重三至四公斤,是鮭魚中的極品!壽司師傅用牠來做刺身,𠝹花刀,入口肉彈,口感細緻。鮭魚一般產卵後死亡,「時不知」身體內尚未有卵,養份沒有流失,油脂就更加豐潤,加上海魚在天然環境中成長,擺動特別多,魚身修長,肉質更有彈性。每年只有五、六月間吃得到的「時不知」,要想吃到也是可遇不可求。捕獲率極低,萬中無一的「時不知」在錯的時間、錯的地點被捕捉,吃到的不單單是味道,還有一種緣份!

Bringing the finest Japanese food to Hong Kong

Named after beautiful fireworks, Hanabi will be a burst of seamless, intricate Japanese flavors meshed with a modern flair. This is thanks in part to popular Japanese sushi chef Michael Chan (previously of Café Kool and NOBU Intercontinental Hong Kong) who brings his signature subtle Japanese cuisine with a fusion flair to this newly opened, intimate, romantic restaurant.

Chef Michael was first introduced to the exquisitely delicious world of Japanese cuisine through his first bowl of Japanese ramen. Noticing the Japanese take on the noodles as a very precise, immaculate and pristine way, Chef Michael then embarked on a journey to working in Japanese kitchens.

Under the tutelage of famed sushi master chef Toshio Matsudo, Chef Michael perfected the art of crafting traditional nigiri rolls. However the chef shares that his most valuable lesson from Matsudo would have to be the interpersonal communication that the chef connects with his diners. “I learned how to create a great relationship with customers while maintaining a strong sense of dignity and professionalism to my craft through Matsudo,” Chef Michael says.

Chef Michael will bring a wildly creative and cutting edge taste to Hanabi – with an exclusive menu of fusion-inspired dishes. “I’m fascinated with utilizing Japanese ingredients and presenting it in a Western fashion,” Chef Michael explains, “It’s a fun and exciting way to enjoy Japanese cuisine.”

Chef Michael will serve two omakase menus at Hanabi. The Tsubomi menu (つぼみ), which stands for “flower bud,” costs $800 and features a daily special appetizer, slices of creative and standard sashimi, soup, seasonal tempura and some standout creative rolls of sushi. The Mankai menu (満開), which stands for “in full bloom,” costs $1,200 and elevates the omakase dining experience to another level with its selection of creative sashimi, grilled seasonal dish and an even more varied selection of creative sushi.
Hanabi seats a cozy 18, with a majority of the guests gathered around the long, elegant sushi bar exchanging witty banter and repertoire with our charming head sushi chef. They are able to warm their lengthy meal up with a fine selection of Japanese sake, specially selected from hard to find distributors in Japan and each with a unique, intoxicating taste.
