Rising star and Spoons founder Rahel Stephanie strives to demystify Indonesian flavours and techniques — one supper club at a time. From demonstrating how the complexities in flavour enhance the plant-based dishes from her heritage to shining a light on lesser-known ingredients, she faithfully presents authentic Indonesian cuisine to an ever-growing global audience. Desa Dialogues EP 004: Renatta Moeloek — Culinary Connections — Sundanese Lalapan, Kisarasa, and bringing people together with food Celebrated chef Renatta Moeloek joined us for a chat during her Desa Potato Head stay for Merasa — 7 Days of Regeneration, where she shared the story of Sundanese Lalapan and hosted the event’s closing dinner. Indonesia’s best-loved Masterchef judge, Renatta has worked in both Asian and European kitchens, bringing contemporary and personal perspectives into her dishes. She leads Kisarasa, an online series that uncovers the people behind each traditional recipe in Indonesia, their personal stories and ways of living.
