The Saraswati Water Palace, also known as Pura Taman Saraswati, is a beautiful temple in Ubud dedicated to the Goddess Saraswati. Designed by Gusti Nyoman Lempad, it features intricate carvings and a pond filled with lotus blossoms and hosts cultural performances at night. Blake Thornley, a creative force, is now leading Mozaic’s Evolution. He worked alongside Chris, honing his craft over a decade ago at Mozaic. Chef Blake, from Christchurch, New Zealand, started working in kitchens at the age of 11 and has a passion for cooking and creativity.

He has worked at renowned restaurants such as Charlie Trotter’s in Chicago and was head chef at the award-winning Mozaic restaurant in Bali for eight years, where he advanced his culinary practice and developed new recipes reflecting local traditions, worldly influences, and unique tastes.

He builds on his foundation in Indonesia’s ingredients and combines it with the fast-paced energy of the Chinese urban scene to reshape perceptions and the gastronomic experience while taking pride in eschewing traditions and emphasizing the integrity of ingredients and passion of producers.

In Bali, arak is more than just a drink - it flows through joyful celebrations and sacred rituals. Deeply woven into the fabric of everyday life, arak embodies the very spirit of the island ✨.

Crafted from fermented salak fruit (aka snake fruit) , Arak Salak boasts a unique flavor profile! The salak is first crushed, then fermented for up to two weeks, resulting in a clear spirit renowned for its smoothness. It captures the natural sweetness and slight tang characteristic of the fruit. Due to the presence of natural sugars, Arak Salak offers an aroma reminiscent of honey . On the palate, it boasts a light to medium body with a lingering finish.

This cocktail is inspired by our childhood 🪁, playing on the playground or in a field where we'd play various games, from hide-and-seek to making toys from wood! The Tegallalang rice terraces at Ceking are a famous tourist stop in Bali. Perched on the edge of a ravine, the viewing spot gives visitors a unique view of the rice terraces on the opposite side, dramatically carved to fit the contours of the steep landscape.

You can even watch farmers working their fields, and see the logic of the irrigation system, called subak. The Balinese subak system was recently recognized by UNESCO as part of theworld heritage of mankind, due to its ancient philosophy of sustainability.

If you drive from Mozaic Ubud, you can reach this panoramic spot within 30
minutes by car.
