Delicious nori seaweed flatbread π
I recently found this amazing recipe in the Feast magazine by chef , so had to try it out.
Since I didn't have self raising flour and I usually use spelt flour anyway. I substituted it with it and added extra baking powder. But other than that I followed the recipe.

I had it with a smashed cucumber salad with chili and soy sauce as recommended and some salmon paste π. Such a delicious lunch.
I will definitely be making these again.
The nights are getting longer and the blackberries have ripened π.

How do you like to start your day?
It's World Photography Day so I wanted to share a more contemporary shot I recently photographed. I had just repainted my garden table with this stunning blue colour, and the sunlight was at its golden hour when I spotted the oranges I had bought earlierβοΈπ. I spent quite some time waiting for the right moment of the light hitting the orange to create a shadow and make it pop against the blue.
It reminded me, how much I love taking pictures β€οΈ.

Simple but tasty midweek dinner ποΈ.β

Cod fried in lots of butter and lemon juice with added capers and season generously. Thickly sliced fondant-style potatoes baked in the oven with some stock and a little oil π₯. The broccoli is blanched and coated in salt and chilli πΆοΈ. Enjoy!β

Secret family recipe alertβΌοΈ
This potato salad might not be much to look at, but it is a dish we have been asked to bring to every bbq, buffet and party by friends and family. This is my husband's famous potato salad π.
π₯Recipe:
boil baby potatoes or quarter full-size potatoes and boil
drain and leave to cool slightly
fry some bacon bits
dice half a red onion
πFor the dressing:
combine the juice of half a lemon with olive oil, 1 tsp of mustard, and a dash of maple syrup or honey, season and whip it with a fork until the ingredients combine
pour the dressing over the slightly warm potatoes, then add a generous helping of mayo and mix. Ad the bacon bits and onion. Eh VoilΓ !
For our vegetarian friends we used to make an extra portion without the bacon bits π

How to make the perfect Caeser salad dressing from scratch. π₯

Recipe:
π±2 garlic cloves
π±5-6 Anchovie filets
π±2 egg yokes
π±tsp mustard
π±Vegetable oil added slowly
while stirring
π±Salt and pepper
π± lemon juice
π±Add a splash of water and stir
π±Add grated parmesan and you guessed
it, stir π₯³

All you need is store-bought puff pastry, sliced courgette, gorgonzola, blanched almonds, chili oil, and 20-25 min in the oven.

My favourite summer salad at the moment is the Californian Caprese salad.
I actually only discovered it a few weeks ago. The recipe is by for
It's so delicious! I love the added grapefruit. The dressing which consists of olive oil, coriander seeds, maple syrup, paprika, Aleppo chili flakes, toasted sesame oil, and sherry vinegar tastes divine!!

First attempt to bbq a whole chicken π.
It tasted good but I would definitely make a few changes next time. I spatchcocked the chicken first, however, it didn't keep its shape when turning it on the bbq. I should have put it in a grilling basket, that way it would have cooked more evenly.

When life throws you a burger EAT IT π
πThe 3rd most popular street food in Berlin in my opinion has to be the burger.
I lost count of the number of Burger places that opened in Berlin in the last 10 years of us living there. From your average burger to gourmet, to organic, to bao, to vegan, breadless, chicken, Wagyu beef burgers - you got it all.
One of my favourite burger places though is . They opened their first shop in 2006 in an old public toilet, just underneath U- Schlesisches Tor. It was an instant success and since then they have opened different shops all over town.

My trip to Berlin has also come to an end, but I am excited to finally share some stories with you.
Berlin is full of street food sold at Imbisse (as the Germans call it).
In my opinion, there are 3 top street foods though.
πNumber one has to be the "Currywurst". I decided to go to Konnopkeβs ImbiΓ for this as it is legendary in itself. It is situated under the train tracks beside U-Eberswalderstrasse.
Max Konnoke has been selling sausages there since 1930. However, it wasn't until 1960 that the currywurst made an appearance. It was originally invented by Herta Heuwer in 1949, who is said to have traded some spirits with British soldiers for some ketchup (or possibly Worcester sauce) and curry powder. She mixed these with some spices, poured them over a grilled sausage, and cut it into bite-size pieces. The Currywurst was born! Since then, it has become a Berlin staple and you can find it being sold on most street corners.
I will try making my own in the next few weeks and share the recipe with you then π½οΈ.

- Almond Horns are a traditional German treat and are mainly made with almonds and marzipan and rolled in more almonds and dipped in dark chocolate. Simply delicious π

Today I am honoring another family member from the genus Allium family - the spring onion π
It is an excellent addition to salads and stir-fries and like all of the genus Allium family members, it's so healthy and packed with Vitamins.
The green part of the spring onion is also low-FODMAP, so a great alternative.
One of my favourite dishes using it, is potato soup topped with bacon, cheddar cheese, and spring onion.

This recipe was given to me by my mother-in-law, who has made this dish quite a few times for us and it's always been a winner.
When I made it this time, I used smoked Coley instead of smoked haddock- Coley is actually a much cheaper and more sustainable option than cod or haddock. I also added spinach instead of peas to the recipe, as my husband doesn't eat peas. I just love the mixture of flavours and adding an ice-cold beer sets this dish off perfectly. π»

Devilled spatchcocked chicken π served alongside very innocent roasted veggies. β

For the devilled chicken πΆοΈ: β
Add 150ml olive oil, juice of one lemon, and 2 crushed garlic cloves. β
In another bowl add the salt, lots and lots of ground pepper, and some very hot chili flakes. β
Marinade the chicken in the oil, garlic, and lemon mixture sprinkle over half of the salt, pepper, and chili mix, and leave for at least 1 hour. β
Preheat the oven around 180 degrees. Put the chicken in the oven and leave to roast for about 45 minutes or until the chicken looks ready and the juices run clear. During the cooking time make sure to baste it a couple of times with the remaining oil and pepper mixtures. β

For the innocent veggies π₯: β
smother them in olive oil and sprinkled over some chili flakes, cumin seeds, salt & pepper, chopped spring onion, and fresh coriander.β In the oven for about 45 min β

The best roast lamb ever tasted π.
It was an adapted version of the famous Kleftiko slow-cooked lamb. This one was made by my mother for a big family dinner on Easter Sunday.
3kg deboned lamb
1 whole head of garlic cut in half through the middle
2 tablespoons dried oregano
6 bay leaves
2 tablespoons of fresh oregano
3 tablespoons of olive oil
juice of 2 lemons
150 ml water
salt & lots of pepper
Cover and oven cook on a low heat for 4.5 hours
We served it with lemon roasted baby boiled potatoes, flatbread greek salad, with some greek tapas and a feta dip
I do mean it when I say it was one of the best lamb dinners I ever had π. That's why there is only one picture of the lamb straight out of the oven. It wouldn't have been fair on everyone else to do more pictures π

A tasty quick lunch with lots of flavor and spice πΆοΈ.
I really like Asian flavors and I love cooking with them too. However, I am living on the west coast of Ireland since last year, which I love but I don't always have access to the ingredients. However, I was able to get up to Belfast recently and managed to do a big shop at the Asia Supermarket on the Ormeau Embankment. One of the best food shops in Northern Ireland (in my opinion).
When I got back, I made a quick lunch using some of my new finds.
I cooked some rice noodles and wok-fried the green cabbage in some garlic oil, ginger, chili, five-spice, soy, and oyster sauce. I oven-roasted sweet potato in garlic oil with hot chili and Kashmiri chili. Added it all together with roasted peanuts, spring onion, and a big squeeze of lime. Served with sesame oil and soy sauce.
This recipe was totally made up but I have been very inspired by a lot of the amazing Insta pages I follow at .

Onions are such a staple food in so many cuisines. There are many different varieties. The red onion has a lovely sweet taste and crunchy texture. It's full of vitamins and antioxidants. It is often added raw to salads, salsas, and other dishes. It adds a punch and looks pretty on the plate too.
