Medicinal Herb Workshop
Date: Saturday 12th August
Venue: The Herb Garden, Naul, Co Dublin
Many common ailments can be safely treated at home, using wild or cultivated herbs. We can also boost our immune systems and fight infection by including herbs in our diet.
This workshop will teach you how to make your own safe and effective herbal teas, infusions, oils, tinctures and poultices using some of the plants that grow freely around us. We will also discuss how to incorporate beneficial herbs into your everyday cooking.
Participants will leave with enough knowledge and confidence to start using herbal remedies immediately to assist with treating many common minor ailments.

Edible gifts are thoughtful, unique, sustainable, eco-friendly and affordable. Join me from the comfort of your own home for an online workshop where I will show you how to make delicious edible gifts using seasonable produce and basic store cupboard ingredients.
I will also have plenty of tips for using recycled jars, bottles and containers and for eco-friendly gift wrapping alternatives.
In this workshop I will show you my take on the following recipes:

Wholegrain Mustard
Pumpkin Jam
Plum Sauce
Herbal Oils and Vinegars
Flavoured Salts and Sugars
The basic recipes can all be adapted and used in many ways. The resulting products make particularly good gifts at this time of year because they pair especially well with cheese, pâté and cold meats.
This workshop will be presented live via Zoom and after the workshop you will receive a recording so that you can go back through it at your own pace. I will also include a handy eBook listing the recipes, ingredient quantities and suggested variations, so you can easily refer back to this when planning your own edible gifts.
If you can attend the workshop live there will be plenty of time after the presentation to chat and ask questions. If you cannot attend live you will receive the recording and eBook and I will be very happy to answer any questions you may have by telephone or email.

Seashore Foraging Walk - 27 Aug 2022 - Donabate, Co Dublin
Learn how to safely identify native Irish coastal plants, herbs, seaweeds and shellfish, with plenty of tips on using them to create tasty and nutritious wild food dishes, drinks and simple herbal remedies.
This walk will mainly focus on the coastal plants in the area and we will discuss their associated folklore, along with their culinary and medicinal uses. We will also identify the seaweeds that we find on the beach.
We will have a seashell hunt for the children, where they will have a set amount of time to collect as many different shells as they can find and then we will identify them together. Make sure they bring along their seaside buckets and spades!

Culinary Uses: Traditionally used to accompany pork. Also good with beef, lamb, poultry and game. Used to flavour sausages, stuffings and many Italian dishes. Compliments fatty meats such as duck and goose. Use sparingly with tomato and cheese dishes.
Preserving method: Oil, vinegar, dry, freeze

Medicinal Uses: Aids digestion, antiseptic, antifungal

Cosmetic Uses: Mouthwash

Culinary Uses: Traditionally used to accompany lamb. Also good with beef, pork, poultry and game. Toss roast potatoes or wedges with finely chopped rosemary. Add to soups, stews, sauces and stuffings. Make a garlic and rosemary herb butter to flavour meats and vegetables. Add a sprig when cooking root vegetables. The flowers add colour and flavour to salads. Rosemary combines well with citrus fruits, especially oranges.
Preserving method: Oil, vinegar, dry, freeze
Drinks: Tea, liqueurs, cocktails, sparkling water
Medicinal Uses: Aids digestion of fats, stimulates circulation, anti-bacterial
Herbal Preparation: Tea, tincture
