In honour of the occasion, we’re featuring a special dish: Rachel’s Beef Braised in O’Hara’s Stout, brewed just 5 km away by the Carlow Brewing Company, and served on a bed of Rooster potatoes 🥔—a true celebration of the finest local ingredients. 👌🏼

This initiative not only highlights the incredible flavours of the county but also brings Carlow’s culinary excellence to the forefront. 😍

💜 Ruby Giant Crocus: A stunning early spring flower, blooming from February to March. Its vibrant purple tones make it a beautiful first sign of the season.

💜 Allium Rosy Dream: These delicate flowers bloom from April to May and can reach up to 40cm tall, perfect for smaller walls or compact garden spaces.

💙 Bluebells: Blooming in May, these shade-loving flowers grow up to 30cm tall. For Spencer, spring simply isn’t complete without the enchanting sight of bluebells.

💛 Daffodil Narcissus Tête À Tête: These miniature daffodils bloom from March to April, growing to a height of 15cm.They are multi-headed, providing a burst of yellow colour and a profusion of blooms.
