Quick & tasty midweek dinner. A duck stir-fry using delicious seasonal asparagus and cherries. Recipe below

Serves 4

Ingredients
- vegetable oil
- duck breasts x 4
- 1 tablespoons Chinese five spice powder

Sauce
- 100ml red wine
- 4 tablespoons cherry jam (or plum)
- 3 tablespoons soy sauce
- 2cm fresh ginger

Noodles
- 1 bunch spring onion
- 1 garlic clove
- sesame oil
- 150g asparagus, woody ends removed
- 2 tablespoons sesame seeds
- 2 tablespoons soy sauce
- 300g straight to wok noodles
- coriander leaves to serve
- salt & pepper

Method
1. Drizzle some oil in a frying pan & get it hot
2. Slash the fat on the duck breasts with a sharp knife
3. Season the duck breast & rub the five spice all over
4. Fry skin side down in the pan to cook on medium for about 5 minutes
5. Cut the bunch of spring onions in half & then cut each half into thin matchstick strips. Peel & chop garlic
6. Cook the sauce by adding the wine, jam, soy sauce to a saucepan. Mince or grate the ginger & add to the pan. Stir & leave to bubble on medium heat for 8 mins
7. Flip the duck over when the skin is crisp. Turn the heat to low and cook for about 5 more minutes.
8. Add a good glug of sesame oil to a large saute pan or wok. Get it hot and add the garlic, spring onion & asparagus. Stir fry for a few minutes.
9. Add noodles & sesame seeds and cook for as long as it says on the packet.
10. Leave the cooked duck to rest on a warm plate for a few minutes and then slice.
11. Check the sauce & noodles for seasoning.
12. Serve on hot plates with fresh coriander on top.
