Lobster Brioche Rolls from Rock Lobster

This is a sort of slightly superior lunchtime roll, and comes from “The home of the €20 Lobster, Rock Lobster!
The restaurant is Ireland's first specialising in Sustainable Seafood and Prime Dry Aged Beef. The beef is sourced from just two farms in Leinster and further dry aged in the restaurant for up to 50 days for the ‘Bone In Rump’. The Lobster is fished from the waters of Laughshinney and around Lambay Isaland.

You've two venues to choose from Donnybrook, above Kiely's Pub, or at Harvey Nicks in Dundrum Town centre.

Lobster Brioche Rolls

Ingredients
Brioche Rolls Makes 6
50 ml of warm milk or buttermilk
7g of fresh yeast
15g of sugar
1 whole egg
420 g of plain flour
5g of salt
35g of soft butter
240 ml lukewarm water

Brioche Roll Glaze
1 whole egg
2 egg yokes
4 tbsp of warm water
Pinch of salt

Method
1) Add all into a kitchen aid and mix for about 7-10 / or by hand for 15 minutes at a medium speed until the mixture is smooth and silky. The mixture will be extremely wet but that is perfectly normal.
2) Scrap out mixture into a bowl and cover with a damp cloth or wrap in Cling film. Allow it to double in size, this should take about 1 hour in a domestic kitchen.
3) Pre heat oven to 180 degrees
4) While Oven is heating up weigh out balls of dough to 120g. Ball them and then just roll them into nice size rolls, and put them on a floured baking tray or baking tray with grease proof paper. I normally put them very close to one another to create an edge on the roll which make them easier for frying later.
5) Allow rolls to double in size, glaze them 2/3 times
6) Cook for 12 minutes approx.

Lobster Mix.
1) Cook one 1 pound lobster in salted water for 6 minutes & then plunge into ice water and leave it for 5 minutes.
2) Pick all the meat from the lobster
3) Bind with a little bit of mayo, cayenne pepper, celery salt, Tabaco, chopped chervil & juice of a half a lemon
4) Fry one of the rolls in a pan on a low heat with a little bit of butter until crisp and golden.
5) Stuff the lobster meat into the roll and find a quiet place to demolish.
