The Clos du Gravillas "Jour de T**f" is a lively Pet-Nat crafted from Muscat Petits Grains grown in the rocky limestone vineyards of the Haut Minervois. The grapes are harvested slightly unripe, then bottled after an initial fermentation with residual sugar, leading to a dry finish with delightful effervescence. This hazy, straw-colored wine offers a touch of sweetness balanced by vibrant acidity, with notes of apple fruit and a hint of earth, providing endless refreshment. We unanimously agreed that it would be a perfect aperitif and an ideal pairing for seafood lovers.

Cocktail of The Month – Beltane
We've been reminiscing about a cocktail that would signify summer, and we've created something that reminds us of it. "Beltane" is an ancient Gaelic pagan word that means "The Fires of Bel." Bel likely refers to the Celtic sun god, Belenus. We believe this cocktail marks the start of the warm season and bright days that replace winter's darkness and frost. Beltane is a time of nature's reawakening and should be celebrated with joy and lightness.
