GARLIC FOR COLDS AND FLU: Ingesting Garlic has long been associated with keeping colds and flu at bay, but what's the science behind it? When you fall victim to a cold, rhinovirus enters your body and once inside it replicates over 100,000 times. Studies have shown that taking garlic each day reduces the risk by 50%.
Easy Made Remedy
Grate a half kilo of garlic and pour boiling hot water over it, this needs to sits for 12 hours, I know it's a long time but there's more. Add two tablespoons of cider vinegar, preferably with the Mother in it and bring it back to the boil and simmer. Now add sugar until you get a syrupy texture going on and add honey. Finally add to a sterile jar and seal. You can take a teaspoon of the mixture three times a day when needed! For a sore throat add the mix to boiling hot water and gargle, that should keep the wolves at bay!

The production of Parmesan dates back to at least the 13th century. It's a salty cow's cheese which is high in glutamate, hence the strong umami taste. Today, the production of Parmesan cheese is highly regulated, the cheese has a protected destination of origin stamp (PDO or DOP in Italian), limited to a small area of Northern Italy, namely Parma, Reggio Emilia, Moderna and Bologna. The Consorzio is the big cheese who makes sure each wheel of the cheese meets a strict criteria in the 12 month long ageing process. The process involves adding unpasteurized cows milk to shallow vats which allows the cream to separate. The contents are then pumped into copper lined tanks. These tanks evenly heat the milk while also imparting copper ions in the mix. The whey when separated was traditionally fed to pigs from which Parma Ham was prepared.

Keep the bowl dry and if you are using packet parmesan thats not from the wheel, open several hours before. This is a salty sheeps cheese originally from Lazio and has been in production since the time of the Roman regions. Today, Sardina is the centre of production, with the sheep grazing on the herbage scattered throughout it rugged landscape. This cheese has a distinctive aroma with a sharp salty flavour and It's great with pasta.

Nutmeg and Mace are not related to the nut family and therefore rarely provokes an allergic reaction when ingested. The tree takes 6-8 years for the fruit yielding female to start flowering and 15 to 20 years to reach maturity. The fruit is yellow, like an apricot and spilt to expel the seed. Nutmeg arrived in Byzantium as far back as the 1st century AD and has been used as a medicine ever since.
While you can buy Nutmeg as a ground spice, there is no comparison with purchasing the whole piece and grating it on the Nutmeg is a popular ingredient in spice blends, in particular Garam Masala, the reason for this is it's ability to balance the richness of foods. It will enhance the flavours of potato and tomato dishes when a little is added to steamed or raw dishes. It is important to note that only a little is needed as it packs a punch! It's a real winter spice and is wonderful added to white sauces (bechamel for lasagne), meaty casseroles , pizza, curries, hot cider or wine and eggnog. Try it to liven up Brussel sprouts, Nutmeg has got Christmas written all over it!
Nutmeg is a mild narcotic and used in moderation acts as a mild stimulant, giving you a feel good feeling! Used to excess it will cause hallucinations and heart palpitations. Long ago people would carry Nutmeg in a locket and chain, together with a small grater of ivory or silver. It was said to calm the nerves, aid digestion and stimulate circulation. Children were given it in minute quantities as a sedative or to aid colic. Today it's an ingredient in sun tan oil on account of it's ability to protect the skin from harmful UV sun rays.

Nutmeg contains Pinene, Linalool, Terpineal, Myristicin and Eugenal. Most importantly Nutmeg contains Copper and Manganese. These keep our bones strong and healthy while Copper boosts immunity and Manganese help synthesize s*x hormones. Try a little in Hot Chocolate at night to calm the body and to chill that mind.
Recipe to relieve joint pain:
Make an ointment with Nutmeg, Ginger, Ground Cloves and Citronella Oil, mixed with uncooked rice. Just apply to the affected area as a poultice and allow to soak in, magic!

Garlic Vinegar or Oxymel
Apple cider vinegar can preserve the fresh qualities of garlic and be a health tonic unto itself. I like this simple preparation at the onset of a cold or flu or to soothe a sore throat. Look for raw and unpasteurized apple cider vinegar — avoid distilled vinegar with apple flavoring. When you add honey to this preparation, herbalists call this an “oxymel.”
What you’ll need…
• 2 whole garlic bulbs or heads
• 1/4 cup honey, or to taste (optional)
• 2 cups apple cider vinegar
• Peel and coarsely chop the garlic and let it sit for 10 minutes. Add it to a glass pint jar until it is 3/4 full.
• If using, add the honey. Fill the jar with apple cider vinegar (you may not use all of the vinegar).
• Stir well. Cover with a glass or plastic lid (the vinegar will corrode a metal lid and ruin the mixture).
• Let this sit in a cool, dark place. Shake it daily. After about 3 days, I like to start tasting it to see how the flavor is evolving. I like to strain it after 1 to 2 weeks when the garlic flavor is still sharp and strong.
The garlic vinegar or oxymel will be best if used within a year. Take this by the teaspoon or by the shot glass at the onset of a cold or flu. Ceramic Garlic Grater
